Ingredients

  • Dumpling wrappers (store-bought or homemade)
  • 1-2 cans (approx. 150-200g) tuna, drained
  • 1/4 block firm tofu (approx. 80g)
  • 1/2 carrot
  • 1 small king oyster mushroom
  • A handful of chives (approx. 30g)
  • 1/2 small onion
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper
  • Salt to taste

Cooking Instructions

Step 1

Thoroughly drain the oil from the canned tuna. Press it with a sieve or kitchen paper to remove as much oil as possible. This is key for a clean, non-fishy flavor.

Step 1

Step 2

Wrap the tofu in a clean cheesecloth or fine-mesh cloth and squeeze out excess water firmly by hand. This prevents the dumpling filling from becoming watery and helps the seasonings penetrate better.

Step 2

Step 3

Finely mince all the vegetables: carrot, king oyster mushroom, chives, and onion. Mincing them finely ensures that the filling ingredients blend well together and don’t clump inside the wrapper, making them easier to eat. (Using a food processor or blender can make this step quicker.)

Step 3

Step 4

Combine the drained tuna, squeezed tofu, minced vegetables, and minced garlic in a bowl. Season with salt and pepper to your preference. Knead the mixture with your hands or a spatula until it becomes cohesive and slightly sticky. This kneading process helps the filling ingredients bind together, preventing them from falling apart when shaping and cooking the dumplings.

Step 4

Step 5

Lightly moisten the edge of a dumpling wrapper with water. Place a portion of the prepared filling onto the center. Fold and pleat the wrapper to create your desired dumpling shape. (You can make half-moon shapes, purse shapes, or any other style you prefer.)

Step 5

Step 6

Arrange the dumplings in a steamer basket over boiling water. Steam for about 8-10 minutes, or until the wrappers become translucent and the filling is cooked through. Cooking time may vary depending on the thickness of the wrappers.

Step 6

Step 7

Enjoy half of the steamed dumplings as they are. For the other half, heat a little oil in a frying pan over medium-low heat. Pan-fry the dumplings until golden brown and crispy on both sides. This adds a delightful crunchy texture to contrast with the soft interior.
