How to Make Delicious Tuna and Potato Stew (Gamja Jjageuli)
Among potato dishes, I personally love ‘Jjageuli.’ While it’s often made with Spam or pork, this recipe features tuna for a delightful twist. It’s a savory, slightly sweet, and spicy stew that’s perfect for serving with rice.
Main Ingredients- 4 medium potatoes
- 1 medium onion
- 2 Korean green chili peppers (Cheongyang peppers)
- 1 can tuna (150g)
Seasoning- 3 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)
- 1.5 Tbsp sugar
- 1 Tbsp red pepper paste (gochujang)
- 1 Tbsp minced garlic
- Pinch of black pepper

Cooking Instructions
Step 1
First, peel the potatoes and cut them into bite-sized pieces, about 2cm thick. Cutting them too small might cause them to break apart during cooking. Slice the onion into thick strips and finely chop the green chili peppers. If you prefer less spice, you can reduce the number of chili peppers or omit them.
Step 2
The key to a delicious Jjageuli is the seasoning! In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of gochugaru (red pepper flakes), 1.5 tablespoons of sugar, 1 tablespoon of gochujang (red pepper paste), 1 tablespoon of minced garlic, and a pinch of black pepper. Mix them well to create a flavorful sauce. You can adjust the sugar amount to your preference.
Step 3
Now, let’s start cooking. In a pot or wok, place the cut potatoes and sliced onions. Drain the tuna well and add it to the pot. Pour in the prepared seasoning sauce, add 300ml of water, and the 2 stock cubes (or broth). The amount of water can be adjusted; add a little more if you prefer a soupier stew. Cover the pot with a lid and bring it to a boil over medium heat.
Step 4
Check if the potatoes are tender by piercing them with a fork. Once the potatoes are cooked, add the chopped green chili peppers and stir gently. Now, uncover the pot and let it simmer over medium-low heat until the sauce has thickened to your desired consistency. When the sauce is slightly reduced but still present, your delicious Tuna and Potato Jjageuli is ready! Serve it hot over a bowl of steamed rice for a truly satisfying meal.
