This Ttuksim Perilla Jeon was inspired by an idea spotted on Pinterest. The fresh, aromatic scent of perilla leaves meets the chewy texture of Ttuksim (beef jerky) for an unexpectedly delightful combination. It’s a fantastic side dish for holiday gatherings or when entertaining guests, and it also makes a satisfying main dish on its own.
Main Ingredients- 1 large piece of Ttuksim (beef jerky)
- 10 fresh perilla leaves
- 2 fresh eggs
- 100g (approx. 1 cup) jeon-garu (pancake mix)
Cooking Instructions
Step 1
First, prepare the ingredients: 1 large piece of Ttuksim, 10 fresh perilla leaves, and 2 fresh eggs.
Step 2
Use kitchen scissors or a knife to easily cut the Ttuksim into bite-sized pieces. Aim for pieces that aren’t too thin, so they retain a pleasant chewiness.
Step 3
Wash the perilla leaves and pat them dry. Trim off any tough stems from the edges of the leaves. This will make the jeon more tender when you eat it.
Step 4
Lightly coat one side of each perilla leaf with jeon-garu (pancake mix). This will help the Ttuksim adhere to the leaves.

Next, lightly moisten the Ttuksim with a little water. If the surface is too dry, the pancake mix won’t stick well. Just lightly dampen it with your hands.

Now, place the moistened Ttuksim onto the perilla leaf that has pancake mix on one side. Roll up the perilla leaf around the Ttuksim, pressing gently to secure the shape.

Coat both sides of the rolled perilla leaf rolls evenly with jeon-garu. This step ensures the jeon will be extra crispy when fried.

In a bowl, crack the 2 eggs and whisk them thoroughly until smooth. This will be your egg batter.

Heat a pan over medium heat and add a generous amount of cooking oil. Carefully place the coated perilla leaf rolls into the hot oil. Be careful not to overheat the pan, as they can burn easily.
