It’s my lovely child, and we’re enjoying this spicy rice cake dish together. Since winter vacation feels endless, we make sure to have tteokbokki at least once a week to keep our spirits high.   • 3 sheets of square fish cakes

  • 1 leaf of sweet cabbage

Perfectly Balanced Tteokbokki Sauce

  • 40g gochujang (Korean chili paste)
  • 25g gochugaru (Korean chili flakes)
  • 25g soy sauce
  • 30g sugar (adjust to taste)
  • A pinch of MSG (Monosodium Glutamate)
  • 600ml water (about 3 cups)

Cooking Instructions

Prepare the soft tteokbokki rice cakes, freshly bought from the market. While I personally enjoy flour-based rice cakes, these rice cakes felt just right for today. Chef Baek Jong-won advises that adding more green onions makes tteokbokki even more delicious. So, feel free to use plenty!

Let’s also prepare some optional add-ins to make our tteokbokki even more exciting! Having pre-soaked glass noodles and hard-boiled eggs ready will make the dish richer and more satisfying.

For the square fish cakes, using a slightly more affordable one can actually enhance the unique savory flavor. I used fish cakes with a higher fish content, but feel free to choose according to your preference. Chop the cabbage into large pieces and slice the green onion diagonally.

Now, it’s time to make the crucial sauce! Based on the recipe shown in the video, I’ve reduced the amount of sugar slightly to suit my taste. Chef Baek’s recipes tend to be a bit sweet, so adjusting the sugar is a good idea. A small amount of MSG (Monosodium Glutamate) will also boost the umami. I added a tiny bit from a sample I had.

Pour 600ml (about 3 cups) of water into a pot. Add the tteokbokki rice cakes, which you’ve briefly rinsed under running water. You don’t need to boil the water before adding the rice cakes.

The order of adding the sauce ingredients is important! First, add the sugar, followed by the soy sauce. This helps the ingredients dissolve well.

Next, add the gochujang (Korean chili paste) for that spicy kick. While using fine gochugaru (Korean chili flakes) can result in a smoother color, regular gochugaru works just as well. If you prefer fine gochugaru, you can sift it through a sieve before adding to prevent clumps.

Finally, add a small amount of MSG, just a little pinch, to enhance the overall flavor. This tiny addition will significantly elevate the taste of your tteokbokki.

When you add the glass noodles, they will absorb the sauce beautifully as the liquid reduces. If the sauce becomes too thick, simply add a little more water to reach your desired consistency.
