This Tteok Japchae is a delightful dish packed with a variety of colorful vegetables and chewy rice cakes, offering a rich and satisfying texture. It boasts a deep, complex flavor profile reminiscent of traditional Royal Court Tteokbokki, making it a fantastic vegetarian meal or a special occasion dish.
Main Ingredients- Tteokbokki Rice Cakes (Wheat or Rice) 300g
- 1 bunch Spinach
- 1 Green Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 Onion
- 2 Tbsp Cooking Oil
- Pinch of Salt
- 1 Tbsp Oligodang (Oligosaccharide Syrup)
- Black Sesame Seeds (for garnish) Pinch
Royal Soy Sauce Marinade- 3 Tbsp Jin Ganjang (Soy Sauce)
- 2 Tbsp Plum Extract or Fruit Enzyme Liquid (adjust sweetness)
- 1 Tbsp Jocheong (Grain Syrup) or Corn Syrup
- 1/2 tsp Tabasco Sauce (optional, for enhanced flavor)
- 1/2 tsp Garlic Powder
- Pinch of Black Pepper
- 1 Tbsp Toasted Sesame Seeds (ground)
- 1 Tbsp Sesame Oil
- 3 Tbsp Jin Ganjang (Soy Sauce)
- 2 Tbsp Plum Extract or Fruit Enzyme Liquid (adjust sweetness)
- 1 Tbsp Jocheong (Grain Syrup) or Corn Syrup
- 1/2 tsp Tabasco Sauce (optional, for enhanced flavor)
- 1/2 tsp Garlic Powder

Cooking Instructions
Step 1
Thoroughly wash all vegetables under running water. Trim the roots of the spinach. For the bell peppers and paprika, remove the seeds and then julienne them into roughly 5cm long strips. Slice the onion similarly. If your tteokbokki rice cakes are quite large, cut them lengthwise in half for a better texture; smaller, softer cakes can be used as they are.
Step 2
Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the sliced onions and sauté until they become translucent and fragrant. Next, add the julienned bell peppers and paprika and stir-fry quickly. It’s important to maintain the crispness of the vegetables, so avoid overcooking. Season lightly with a pinch of salt.
Step 3
Add the prepared rice cakes and spinach to the pan with the sautéed vegetables. Pour in the pre-mixed ‘Royal Soy Sauce Marinade’. Stir-fry everything together until the spinach wilts slightly and the rice cakes become tender and absorb the sauce. Gently stir with chopsticks or a spatula to prevent the rice cakes from sticking to the bottom of the pan.
Step 4
Once the sauce has coated the rice cakes and vegetables evenly, drizzle 1 tablespoon of oligodang around the edges of the pan. Stir-fry briefly one more time to create a glossy finish. This step adds a subtle sweetness and shine, making the dish more appealing. Turn off the heat, and finally, sprinkle generously with black sesame seeds for garnish.
