(Lost in cherished memories of Thailand) We’re dining as if we’re in Thailand. The birds’ songs, the piano’s tune, and the dazzling sunlight add an extra layer of deliciousness to our wonderful meal. This ‘Pineapple Fried Rice’ is a dish I occasionally make, evoking fond memories of my travels in Thailand.
Main Ingredients- 1 ripe pineapple
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/4 carrot
- A portion of fresh shrimp
- 1/2 imitation crab stick
- A little bit of green onion
Cooking Instructions
Step 1
Found a perfectly ripe pineapple? I made this delicious Pineapple Fried Rice with one that was a bit too ripe! First, cut the pineapple in half and carefully scoop out the flesh, creating a natural bowl for your fried rice. Be sure to leave a sufficient thickness of the rind so it doesn’t break.
Step 2
Now, let’s prepare the vegetables and ingredients for the fried rice! Dice the pineapple into 0.5cm cubes. Finely dice the red and yellow bell peppers. Mince the carrot and finely chop the green onion. Peel and devein the shrimp. Slice the imitation crab stick into bite-sized pieces. Preparing all the ingredients as shown in the picture will make the cooking process much smoother.
Step 3
Heat a pan over medium-high heat and melt 3 tablespoons of butter. Add all the prepared vegetables, shrimp, and imitation crab stick. Stir-fry quickly over high heat until the vegetables are slightly tender and the shrimp turn pink. Stir-frying over high heat helps maintain the crispness of the vegetables.
Step 4
Once the shrimp are fully cooked and have turned a lovely pinkish color, make a well in the center of the pan. Crack the egg into the cleared space.

Using chopsticks or a spatula, gently scramble the egg in the center until it forms soft curds. Try not to break it up too much; aim for medium-sized pieces.

Once the scrambled egg is cooked, gently mix it with the other ingredients in the pan. Stir everything together lightly to combine.

Now it’s time to add the rice. Clear a space in the center of the pan again and add 1.5 bowls of warm cooked rice. Using a spatula, gently break up any clumps of rice and stir-fry it with the other ingredients, ensuring everything is well combined.

Let’s get stir-frying! Cook until the rice grains are evenly coated with the seasoning. The key to this fried rice’s flavor is the fish sauce and oyster sauce, which bring that authentic Southeast Asian taste. Adjust the amounts to your preference. If you prefer a milder flavor, you can use salt instead for a clean and simple taste.
Step 9
Time to add a nutty crunch! Sprinkle 2 tablespoons of crushed peanuts over the fried rice. The peanuts will add a wonderful savory depth to the dish.
