  • 1 cup beet juice
  • 1 tbsp mugwort powder
  • 1/2 tsp salt
  • 3 fresh ginseng roots
  • 6 dried jujubes
  • 1/2 tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the ingredients for your rice. You’ll need rice (Gyeonggimi Kawaji No. 1 is highly recommended!), soy milk and beet juice for the cooking liquid, mugwort powder for aroma, and the star ingredients: ginseng and jujubes. It’s best to soak the rice for about 30 minutes beforehand.

Step 2

Prepare the jujubes by removing the pits and slicing them thinly. Wash the ginseng roots thoroughly to remove any dirt, then slice them into thin rounds or thin slices. If you prefer a less bitter taste, you can remove the root end of the ginseng.

Step 3

Add the soaked rice to your rice cooker. Then, place the sliced jujubes and ginseng into the rice cooker along with the rice. This allows the flavors and aromas of the ingredients to infuse into the rice as it cooks.

Step 4

Using soy milk as part of the cooking liquid is a secret to making the rice incredibly nutty and smooth. First, we’ll make a pot of plain white rice using only soy milk. Use a ratio similar to regular water for cooking rice. (Example: For 2 cups of rice, use 1 cup soy milk + a little water).

Step 5

Next, let’s add a beautiful red color. In the rice cooker, mix half soy milk and half beet juice to create the cooking liquid. By combining 1/2 cup soy milk and 1/2 cup beet juice, you’ll achieve a lovely, subtly red-colored nutritious rice.

Step 6

Finally, it’s time to add the fragrant mugwort. Add soy milk to the rice cooker, and then whisk in 1 tablespoon of mugwort powder until well combined. It’s important to mix the mugwort powder thoroughly into the soy milk beforehand to prevent clumps.

Step 7

Cook all of these rice variations using your rice cooker’s standard ‘cook’ function. You’ll be amazed at how well the rice cooks, especially when using good quality rice like Gyeonggimi Kawaji No. 1 – it really makes a difference in taste! (The photo shows rice cooked in a traditional stone pot, which gives a wonderful texture!).

Step 8

Wow! Doesn’t the freshly cooked rice look absolutely delicious? The rice cooked with beet juice has turned out a beautiful vibrant red. It looks so healthy just by looking at it.

Step 9

See how each grain of rice looks so wonderfully chewy and plump? While beets have a very mild flavor, they are packed with nutrients. They are incredibly good for your health, so enjoy them with confidence!

Step 10

The aromatic mugwort nutritious rice, freshly cooked, is also a delight. As soon as you open the rice cooker, the fragrant scent of mugwort fills the air, whetting your appetite.

Step 11

Not only is there the scent of mugwort, but the subtle aromas of ginseng and jujubes blend beautifully, creating a truly exquisite flavor profile. These three elements come together to create a healthy and delicious meal.

Step 12

And finally, look at the plain white rice cooked with just soy milk. It has a wonderful sheen and a perfectly chewy texture, much like sticky rice. You can almost taste the nutty flavor of the soy milk in every bite.

Step 13

After letting the warm rice cool slightly, lightly coat your hands with sesame oil. Then, gently shape the rice into small balls or your desired form. Applying a little sesame oil prevents the rice from sticking to your hands.

Step 14

Shape them into bite-sized pieces that are easy to pop into your mouth. These are perfect as a snack for children, a side for lunchboxes, or a healthy bite for adults.

Step 15

Truly, these colorful nutritious rice balls look as good as they taste! They resemble a box of colorful jewels.

Step 16

This delicious nutritious rice is filled with health, flavor, and nutrients. The Gyeonggimi Kawaji No. 1 rice, with its soft yet chewy texture, makes the rice exceptionally tasty. Each bite makes you feel healthier.

Step 17

The beautifully colored beet nutritious rice is as lovely as a single rose. This stunning hue comes naturally from the beet itself.

Step 18

And the mugwort nutritious rice, with its delicate and refreshing mugwort aroma, is equally delightful. You can almost sense the fresh scent of mugwort within each grain of rice.

Step 19

Lastly, we have the nutritious rice where the nuttiness of the soy milk has permeated every grain. As the saying goes, ‘Rice is medicine,’ and we hope everyone becomes healthier by enjoying this nutritious rice! Create a bountiful and healthy meal.
