Main Ingredients

  • Thinly Sliced Pork Belly (Daepae Samgyeop Sal) 400g
  • 1/2 Onion
  • 2 King Oyster Mushrooms
  • 1/4 Bell Pepper (any color)
  • 10 Cherry Tomatoes
  • 2 cups Spaghetti Tomato Sauce (approx. 400ml)
  • 1 cup Water (approx. 200ml)

Pork Marinade

  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Mirin (or cooking wine)
  • 0.5 Tbsp Sesame Oil
  • Pinch of Black Pepper

Additional Ingredients

  • Shredded Cheese (e.g., Mozzarella or Pizza Blend) – a small amount
  • Salt to taste

Cooking Instructions

Step 1

First, prepare the vegetables. Wash and halve or quarter the 10 cherry tomatoes. Slice the 1/2 onion into thick strips or dice it. Slice the 2 king oyster mushrooms lengthwise or into thick pieces. Cut the 1/4 bell pepper into similar-sized pieces for color. Have your 2 cups of tomato sauce ready.

Step 1

Step 2

Marinate the pork. Place the 400g of thinly sliced pork belly in a bowl. Add 1 Tbsp gochujang, 2 Tbsp soy sauce, 1 Tbsp minced garlic, 2 Tbsp mirin, 0.5 Tbsp sesame oil, and a pinch of black pepper. Gently mix everything together with your hands until the pork is evenly coated. Let it marinate for about 10 minutes. This step ensures the pork absorbs the flavors beautifully.

Step 2

Step 3

Heat a pan over medium heat and add a little cooking oil. Add the prepared onion, bell pepper, and king oyster mushrooms. Stir-fry until the vegetables soften and become slightly translucent, releasing their sweet aroma. This usually takes a few minutes.

Step 3

Step 4

Now, add the marinated pork to the pan over medium-high heat. Stir-fry quickly, breaking up any clumps, until the pork is cooked through and the marinade starts to coat the vegetables. Keep everything moving in the pan for even cooking.

Step 4

Step 5

Once the pork is fully cooked, pour in the 2 cups of tomato sauce and add the sliced cherry tomatoes. Stir well to combine all the ingredients. Let it simmer for a minute or two until the tomato sauce is heated through and the flavors begin to meld.

Step 5

Step 6

Pour in 1 cup of water and bring the mixture to a gentle simmer over medium-low heat. Cook until the sauce thickens to your desired consistency. Taste the sauce and add salt if needed to adjust the seasoning. You can also add more black pepper to enhance the flavor, if you like. Be careful not to let the sauce reduce too much.

Step 6

Step 7

Serve the delicious Tomato Cheese Jeyuk Bokkeum over warm rice. Sprinkle a generous amount of shredded cheese on top, if desired. The cheese will melt, adding a creamy and savory dimension to the dish. Enjoy your special meal!
