Making a Light and Healthy Tofu Noodle Aglio e Olio
Are you interested in healthy eating and exploring new diet-friendly recipes? While I’m not entirely sure if this recipe is strictly for dieting, I’ve created a delicious Aglio e Olio using tofu noodles! It’s a great option for a lighter yet satisfying meal.
Ingredients- 3 packs Tofu Noodles (drained)
- 15 cloves Garlic (thinly sliced)
- A little Bacon or Shrimp (optional, to taste)
- A pinch of Black Pepper (freshly ground is best)
- 2-3 Tbsp Chicken Stock (for seasoning)
- 1 Tbsp Dried Parsley Flakes
- 2 cups Olive Oil (generous amount)
- 2 Tbsp Grated Parmesan Cheese (for topping)
Cooking Instructions
Step 1
First, rinse the tofu noodles thoroughly under running water to remove any residue. Drain them well in a colander. Thinly slice all the garlic cloves. You can adjust the amount of garlic to your preference, but using plenty will enhance the flavor.
Step 2
Pour 2 cups of olive oil into a wide pan and heat over medium-low heat. Once the oil is warm, add all the sliced garlic and fry gently until golden brown. Be careful not to burn the garlic, as this will create a fragrant garlic-infused oil.
Step 3
When the garlic is a nice golden color, add your choice of bacon or shrimp and sauté. If using bacon, chop it into bite-sized pieces. Cook the shrimp until pink and opaque. While bacon or shrimp add extra flavor, they can be omitted for a lighter dish.
Step 4
Add 2 tablespoons of chicken stock to the pan. Chicken stock helps to season the dish. Start with 2 tablespoons, taste, and add more or less as needed to suit your palate. Once seasoned with chicken stock, add the drained tofu noodles and stir-fry until well combined with the other ingredients.
Step 5
Next, add 1 tablespoon of dried parsley flakes. Parsley adds a lovely green color and fresh aroma to the dish. Stir-fry to ensure the parsley coats the noodles evenly, making the dish look more appealing and appetizing.
Step 6
Continue to stir-fry for about 3-5 minutes until everything is well incorporated. Transfer the finished Tofu Noodle Aglio e Olio to a serving plate. Finally, sprinkle 2 tablespoons of grated Parmesan cheese on top for an extra layer of savory flavor. It’s best enjoyed immediately while warm.
