Main Ingredients- 1 block Tofu
- 1/4 head Kimchi (well-fermented recommended)
- 1 can Tuna (approx. 150g)
Cooking Instructions
Step 1
Rinse the kimchi thoroughly and squeeze out excess water. Cut it into bite-sized pieces, slightly smaller than typical. This ensures it cooks evenly when stir-fried.
Step 2
Drain all the vegetable oil from the canned tuna. Removing this oil is crucial for a clean, non-fishy flavor in the finished dish.
Step 3
Heat a pan over medium heat. Add the chopped kimchi, followed by 1 tablespoon of sugar and 1 tablespoon of soy sauce. The sugar balances the kimchi’s sourness and enhances its savory notes, while soy sauce adds depth of flavor.

Once the kimchi begins to soften, pour in 1 cup (approx. 200ml) of water, measured using a paper cup. Adding water helps prevent the kimchi from burning and keeps it moist during cooking.

Continue to stir-fry the kimchi over medium heat, allowing it to simmer in the liquid. When the kimchi liquid has reduced by about half, add another cup (approx. 200ml) of water. Dividing the water in two steps helps to tenderize the kimchi while building layers of flavor.

Once the sauce has thickened and the kimchi is tender, add the drained tuna. Gently mix it with the kimchi and continue to cook until the liquid has mostly evaporated. Wrap the block of tofu in paper towels to absorb as much moisture as possible. Slice it into approximately 1.5cm thick pieces.
