Main Ingredients- 1 block of soft tofu
- 1/4 head of well-fermented kimchi
- Pork (approximately the same amount as the kimchi)
- 1 onion
Stir-fried Kimchi Seasoning- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oligo-dang (corn syrup) or mulyeot (rice syrup)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1/2 Tbsp ginger powder (or minced fresh ginger)
- A pinch of black pepper
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oligo-dang (corn syrup) or mulyeot (rice syrup)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1/2 Tbsp ginger powder (or minced fresh ginger)
- A pinch of black pepper
Cooking Instructions
Step 1
Let’s start by preparing the tofu. Bring a pot of water to a boil, add the block of tofu, and blanch for about 1 minute. This process firms up the tofu and removes any unwanted raw smell, enhancing its flavor. Once blanched, drain the tofu well and cut it into bite-sized pieces, about 2-3 cm thick.
Step 2
Peel and wash the onion thoroughly. Then, slice it into pieces that are easy to eat alongside the stir-fried kimchi, such as thin strips or small cubes (about 0.5 cm thick).
Step 3
For the kimchi, you can lightly rinse it under running water to remove some of the excess seasoning, or use it as is depending on its sourness level. Chop the kimchi into small pieces, about 1-2 cm in size, for easier consumption.
Step 4
Cut the pork into bite-sized pieces, similar in size to the chopped kimchi. The pork will add a wonderful depth of flavor to the stir-fried kimchi.

Now, let’s make the stir-fried kimchi! Heat a pan over medium heat and add 1-2 tablespoons of sesame oil. Add the chopped kimchi and stir-fry for about 10 minutes until it becomes tender and fragrant.

Once the kimchi is softened, add the sliced pork and all the stir-fried kimchi seasoning ingredients (gochujang, gochugaru, oligo-dang, sugar, minced garlic, ginger powder, and black pepper). Continue to stir-fry until the pork is fully cooked.

When the pork is cooked through, cover the pan with a lid and reduce the heat to medium-low. Let it simmer gently for another 5 to 8 minutes. This low-and-slow cooking allows the kimchi to absorb the flavors deeply, resulting in a richer taste.

Remove the lid and add the sliced onion. Increase the heat to high and quickly stir-fry just until the onion becomes slightly translucent. Stir-frying quickly at the end helps keep the onion crisp and fresh.
