Curry Sauce Ingredients- 30g Hansalim Organic Rice Curry Powder
- 4g Turmeric Powder
- 4g Simply Organic Pure Curry Powder
- 300-400ml Water
Main and Other Ingredients- 80g Chicken Breast
- 150g Tofu (approx. 1/2 block)
- 60g Potato (approx. 1/2 small)
- 60g Carrot (approx. 1/2 small)
- 70g Onion (approx. 1/2 small)
- Avocado Oil, for cooking
- 1 bunch Scallions (approx. 18-20g)
- 3 medium Button Mushrooms
- 2 Tbsp Tomato Sauce (or Tomato Puree), generously

- 150g Tofu (approx. 1/2 block)
- 60g Potato (approx. 1/2 small)
- 60g Carrot (approx. 1/2 small)
- 70g Onion (approx. 1/2 small)
- Avocado Oil, for cooking

- 2 Tbsp Tomato Sauce (or Tomato Puree), generously
Cooking Instructions
Step 1
Prepare the Curry Sauce Ingredients: The ‘Hansalim Organic Rice Curry’ is a good choice as it’s gluten-free. Gather the curry powder, turmeric powder, and ‘Simply Organic’ pure curry powder. Commercial curries can often be quite sweet, oily, and have artificial umami flavors. Mixing in turmeric and pure curry powder helps create a healthier and more profound taste.
Step 2
Mix the Curry Powders: Combine the curry powders in the following ratio: 30g of Hansalim Organic Rice Curry Powder, 4g of Turmeric Powder, and 4g of Pure Curry Powder. The ‘Simply Organic’ curry powder has a slightly bitter and spicy note with a strong aroma, so it’s recommended to adjust the amount to your preference.
Step 3
Combine Curry Powder and Water: In a bowl, add 150ml of water to the mixed curry powders and stir well until smooth, ensuring there are no lumps.
Step 4
Prepare the Vegetables: Dice the potato, carrot, and onion into roughly 2cm pieces. Finely chop the scallions.
Step 5
Pan-fry the Tofu (Phase 1): Heat a non-stick skillet over high heat without any oil. Add the tofu and stir-fry until it becomes slightly crispy and crumbly, allowing its moisture to evaporate.
Step 6
Stir-fry Tofu and Scallions Together: Once about two-thirds of the tofu’s moisture has evaporated and it’s starting to look crumbly, add the chopped scallions to the skillet. Continue to stir-fry over medium heat without adding oil.
Step 7
Continue stir-frying until the tofu is very dry and crumbly, and the scallions are lightly cooked.
Step 8
Transfer the cooked tofu to a separate bowl and set aside.
Step 9
Sauté Chicken and Onion: Wipe the skillet clean and add a little avocado oil over medium heat. Add the blanched chicken breast and chopped onion, and sauté until the onion softens and the chicken is cooked through. It’s recommended to blanch the chicken breast in boiling water briefly before using to ensure it’s cooked safely and remains tender.
Step 10
Add Potatoes and Carrots: When the chicken is about half-cooked, add the diced potatoes and carrots to the skillet. Continue to stir-fry over medium heat.
Step 11
Add Curry Mixture and Mushrooms: Once the potatoes are slightly tender, pour in the prepared curry liquid and add the sliced button mushrooms. Bring the mixture to a boil.
Step 12
Adjust Consistency and Simmer: Add an additional 150-200ml of water to reach your desired curry consistency. Stir frequently and simmer over medium heat for about 4-5 minutes, or until the potatoes and carrots are completely tender.
Step 13
Enhance Flavor: Just before the curry is fully done, stir in 2-3 tablespoons of tomato sauce (or puree). This adds a subtle sweetness and deepens the savory flavor. Cook for another minute over medium heat.
Step 14
Combine and Serve: Gently fold the stir-fried tofu into the finished curry. Alternatively, you can serve the curry in a bowl and top it with the crispy tofu mixture.
