Ingredients

  • 3 fresh eggs
  • 1/2 block firm tofu
  • 1 onion
  • 2 florets broccoli
  • 2-3 cherry tomatoes
  • 1 slice cheddar cheese
  • 1/2 slice brie cheese
  • 1 piece camembert cheese
  • 3-4 Tbsp milk
  • 1 pinch salt
  • 2-3 Tbsp oil

Cooking Instructions

Step 1

Cut the tofu into 1cm cubes. Heat 2-3 tablespoons of oil in a non-stick skillet over medium heat. Sprinkle a tiny pinch of salt over the tofu and pan-fry for at least 10 minutes until golden brown and slightly crispy. This process removes excess moisture and enhances the tofu’s savory flavor.

Step 1

Step 2

Blanch the broccoli florets in boiling water with 1 tablespoon of salt for about 1 minute. Immediately drain and rinse under cold water, then pat dry thoroughly with paper towels. This helps maintain the broccoli’s crisp texture and vibrant color.

Step 2

Step 3

Peel and thinly slice the onion. Set aside for sautéing.

Step 3

Step 4

In a bowl, crack the 3 eggs. Add 3-4 tablespoons of milk and a pinch of salt. Whisk gently until well combined. Remember that the cheeses will add saltiness, so avoid adding too much salt at this stage.

Step 4

Step 5

Cut the blanched broccoli into bite-sized pieces. Halve the cherry tomatoes for a more appealing presentation.

Step 5

Step 6

Cut the brie, cheddar, and camembert cheeses into small pieces. The combination of different cheeses will add depth and richness to your frittata.

Step 6

Step 7

In the same skillet (or a clean one), add 1-2 tablespoons of oil over medium heat. Add the sliced onions and sauté until they become translucent and slightly softened, releasing their natural sweetness.

Step 7

Step 8

Once the onions are cooked, pour the whisked egg mixture evenly into the skillet. Reduce the heat to medium-low (around 4-5 on a typical stovetop). Be careful not to let it cook too quickly and burn.

Step 8

Step 9

As the egg mixture begins to set around the edges, arrange the pan-fried tofu cubes, chopped broccoli, halved cherry tomatoes, and the various cheese pieces evenly over the top. Cover the skillet with a lid and cook on medium-low heat for about 10 minutes, or until the frittata is fully set and the cheese is melted and bubbly. Enjoy your delicious homemade Tofu and Cheese Frittata!
