Cooking Instructions
Step 1
Begin by thoroughly washing the sesame seeds. Rinse them under running water multiple times to remove any dirt or debris. Once washed, drain them well in a sieve, allowing excess water to drip off. Place the drained sesame seeds in a dry frying pan and start roasting over medium-high heat. Continue to roast until most of the moisture has evaporated. You’ll notice a crackling sound and steam rising as they cook.
Step 2
Once you can see that the moisture has mostly dissipated, reduce the heat to low. This is the crucial stage where we coax out the rich, nutty flavor of the sesame seeds. Roasting slowly over low heat ensures they cook evenly throughout without burning, resulting in delicious toasted seeds.
Step 3
It’s vital to continuously stir the sesame seeds while roasting to prevent them from sticking to the bottom of the pan or burning. Use a spatula or a stirring spoon to gently move the seeds around.
Step 4
Keep stirring consistently over low heat for at least 30 minutes. This extended roasting time might seem long, but it’s what develops the deep, satisfying nuttiness of the sesame seeds. To check if they’re done, take a small pinch of seeds and rub them between your fingers. If they crumble easily, they are perfectly toasted. If they remain whole and hard, continue roasting over very low heat for a bit longer. These carefully toasted sesame seeds will add a wonderful depth of flavor to any dish.
