Main Ingredients

  • Somen noodles (thin wheat noodles) – 1 serving (approx. 100g)
  • Fresh perilla leaves (kkaennip) – 1 handful (about 5-7 leaves)
  • Seasoned roasted seaweed (gim) – 1 handful (about half a bag)

Special Toasted Sesame Oil Sauce

  • Soy sauce – 3 Tbsp (you can use your preferred type of soy sauce)
  • Toasted sesame oil (100% pure) – 2 Tbsp (choose one with a strong aroma)
  • Sugar – 1 Tbsp (adjust sweetness to your liking)

Cooking Instructions

Step 1

First, bring a generous pot of water to a rolling boil. Add the somen noodles (1 serving) and cook for about 3 minutes. Stir occasionally to prevent the noodles from sticking together. Once cooked, drain the noodles thoroughly and rinse them under cold running water until they are firm and slightly chewy. Rinsing in cold water is key to achieving that perfect al dente texture.

Step 2

In a bowl, place the drained somen noodles. Add the 3 Tbsp of soy sauce, 2 Tbsp of toasted sesame oil, and 1 Tbsp of sugar. Gently toss and mix the noodles with chopsticks until the sauce is evenly coated. You’ll start to smell the wonderful nutty aroma of the sesame oil filling your kitchen!

Step 3

Thinly slice the washed perilla leaves. Crumble the seasoned roasted seaweed into bite-sized pieces. Arrange the sliced perilla leaves and crumbled seaweed attractively over the dressed noodles. The freshness of the perilla and the crispiness of the seaweed add delightful texture and flavor contrasts.

Step 4

For an even richer and creamier experience, carefully place a fresh egg yolk on top of the noodles. Break the yolk and mix it into the noodles for a luxurious finish. This adds a wonderful smoothness and depth of flavor. You can also sprinkle some toasted sesame seeds on top for extra garnish, if desired.
