Main Ingredients

  • 3 salmon heads

Basic Seasoning (for Salt Grill)

  • Lemon juice (or cooking wine) to taste
  • Ground black pepper, a pinch
  • Garlic salt (or salt) to taste

Gochujang Marinade

  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil

Soy Sauce Marinade

  • 2 Tbsp Yoshida sauce (or soy sauce)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, generously brush the salmon heads with lemon juice to remove any fishy odor. Then, sprinkle them evenly with black pepper and garlic salt for a light seasoning. Place the seasoned salmon in the oven for an initial pre-grill to lightly cook the exterior. (Approx. 10 minutes at 180°C / 350°F).

Step 1

Step 2

Once the salmon is about two-thirds cooked from the pre-grill, apply your chosen marinades. On one part, spread the sweet and spicy gochujang marinade (gochujang, minced garlic, sugar, sesame oil). On another part, apply the savory soy sauce marinade (Yoshida sauce or soy sauce, minced garlic). Return the marinated salmon to the oven and grill until golden brown and cooked through. (Grill for an additional 10-15 minutes at 180°C / 350°F, checking periodically to prevent burning).

Step 2

Step 3

The simple salt-grilled salmon, seasoned only with lemon juice, pepper, and garlic salt, is also a delicious option. It allows you to savor the natural flavor of the salmon.

Step 3

Step 4

The gochujang-marinated grilled salmon, with its sweet and spicy kick, is a real appetite-enhancer. It makes an excellent side dish for rice.

Step 4

Step 5

The soy sauce and garlic marinated grilled salmon, offering a delightful balance of sweet and savory flavors, is equally superb. This version is often a hit with children as well.

Step 5

Step 6

This variety of grilled salmon pairs wonderfully with a mild and savory spinach doenjang guk (Korean soybean paste soup). The soup complements the rich flavors of the salmon beautifully.

Step 6

Step 7

Regardless of the preparation method, grilled salmon can sometimes leave a slightly rich aftertaste. My husband enjoyed his with a refreshing cold beer, while I opted for a bright strawberry sorbet to cleanse my palate. Enjoy this delicious salmon dish in your preferred way!
