To show my gratitude to my incredibly kind physical therapist, I decided to make a special rolled omelet with three different flavors and shapes that kids love. Rolled omelets are common but can be surprisingly tricky, so I’ll guide you through this recipe step-by-step, making it easy for even beginners. If you have picky eaters at home, this visually appealing and delicious rolled omelet is a fantastic way to encourage them to eat well.   • Imitation crab sticks (surimi)
  • Gim (seaweed sheets for kimbap)

Seasoning & Others

  • Sake (mirin) or cooking wine
  • Salt (or seasoned salt)
  • Olive oil
  • Minced green onion

Cooking Instructions

Step 1

Separate the egg whites and yolks. Season the egg whites lightly with sake and salt for a tender texture, and do the same for the yolks. Whisk each separately until well combined.

Step 2

Heat a non-stick pan over medium-low heat. Add a thin layer of olive oil and coat the entire surface of the pan. Be careful not to use too much oil, as it can make the omelet greasy.

Step 3

First, pour the seasoned egg whites thinly into the heated pan. Cook over low heat until about 70% set, then gently roll it up. This creates a soft, white rolled omelet.

Step 4

Push the white omelet to one side of the pan. Pour the seasoned egg yolks into the empty space. Once the yolks begin to set slightly, cut a sheet of gim (seaweed) to size and place it over the yolks. Carefully roll the yolk omelet over the gim, enclosing it completely and forming a firm roll.

Step 5

Next, prepare the mixed egg batter by combining the whisked whites and yolks. Shred the imitation crab sticks finely and mix them into the egg batter. Lightly oil the pan again and pour a thin layer of the crab-egg mixture. When it’s about half-cooked, place the gim-wrapped omelet from the previous step in the center and roll the crab mixture around it. This will create a delicious omelet with a flavorful filling.

Step 6

Let the three finished rolled omelets cool slightly. Cutting them while hot can cause them to fall apart. Once they have cooled down a bit, slice them into your desired thickness and arrange them beautifully on a plate. These elegant rolled omelets are perfect as a side dish for kids’ lunchboxes or as an appetizer for guests!
