Main Ingredients

  • 1 potato
  • 2 slices of sliced ham
  • A little bit of carrot

Seasoning Ingredients

  • 2 pinches of salt
  • 1/2 tsp minced garlic
  • 2 Tbsp sesame oil

Cooking Instructions

Using a mandoline slicer will help you slice the potatoes very thinly and uniformly. Thinner slices result in a much better texture when stir-fried.

Julienne the thinly sliced potatoes into about 0.2cm thick strips. Rinse the potato julienne several times in cold water to remove excess starch. Drain them thoroughly in a colander; remaining water can cause the potatoes to clump when cooking.

Thinly julienne the carrot to a similar thickness as the potato. This adds color and balances the flavors.

Thinly slice the sandwich ham into strips similar in thickness to the potato julienne. Two slices of ham are appropriate for one potato. Thinly sliced ham will blend more softly with the potatoes.

Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add 1/2 tsp of minced garlic and stir-fry until fragrant, allowing the garlic aroma to infuse into the oil and enhance the dish’s flavor.

Once the garlic is fragrant, add the sliced ham, carrot, and the well-drained potato julienne to the pan. Stir-fry gently, ensuring the ingredients don’t stick together. Cooking over medium heat rather than high heat prevents burning and ensures even cooking.

As the potatoes begin to cook, add about 2 pinches of salt to season the ingredients lightly. Since ham is already salty, it’s best to use only a small amount of salt.

When the potatoes become translucent and tender, drizzle in 2 Tbsp of sesame oil to add shine and a nutty aroma. Stir everything gently and continue to stir-fry for about 2 more minutes until the delicious potato and ham stir-fry is complete. Be careful not to overcook, as the potatoes can become mushy.
