  • A little cooking oil (for coating the pan)

✨ Crafting a Flavorful Marinade ✨

  • 6 Tbsp Soy Sauce (approx. 90ml)
  • 6 Tbsp Water (approx. 90ml)
  • 4 Tbsp Mirin or Cooking Sake (approx. 60ml)
  • 2 Tbsp Sugar (approx. 30g)
  • 1.5 Tbsp Oligosaccharide (approx. 22g, for glaze and sweetness)
  • 1 Tbsp Minced Garlic (generous, approx. 15g)
  • 1 Tbsp Sesame Oil (for finishing aroma)

Cooking Instructions

Step 1

Gently pat the pork slices dry with paper towels to remove any excess moisture or blood. Then, make shallow cuts across the meat or prick it several times with a fork. This helps the marinade penetrate more deeply, infusing it with flavor.

Step 1

Step 2

Let’s create a wonderfully fragrant marinade using basic ingredients you likely have at home. For an even more complex flavor profile, you can add pureed apple, pear, or onion, or a small amount of commercial pear juice or ‘Pear Juice Drink’. In a spacious mixing bowl, combine all the marinade ingredients listed below. Whisk them together thoroughly with a whisk or spoon until well combined and smooth.

Step 2

Step 3

Now, it’s time to marinate the pork! To ensure even coating, we’ll layer the pork and marinade in a container. Start by pouring a portion of the prepared marinade into the bottom of an airtight container. Spread it evenly across the base.

Step 3

Step 4

Carefully lay a slice of pork on top of the marinade layer.

Step 4

Step 5

Pour another serving of the marinade over the pork slice. Ensuring each piece of meat gets coated is key.

Step 5

Step 6

Continue this process: add a layer of pork, then a layer of marinade. Repeat until all the pork is in the container. Layering helps the marinade distribute evenly as it seeps in.

Step 6

Step 7

Once all the pork slices are in the container, pour the remaining marinade generously over the top. Make sure the pork is well submerged in the marinade for best results.

Step 7

Step 8

Seal the container tightly and store it in the refrigerator, preferably a kimchi refrigerator for optimal low-temperature aging. Slow marinating allows the flavors to develop beautifully.

Step 8

Step 9

For the best flavor, marinate for at least overnight (about 12 hours). This allows the marinade to fully penetrate the meat, resulting in a wonderfully tender, juicy, and perfectly balanced sweet and savory pork neck. If you’re short on time, marinate for at least 2-3 hours beforehand. The longer it marinates, the tastier it will be!

Step 9

Step 10

When cooking, preheat your frying pan well. Add a little cooking oil and gently wipe it around with a paper towel to lightly coat the pan. Then, place the marinated pork in the pan. It’s recommended to add a little extra marinade along with the pork as it cooks; this helps create a richer flavor. (Note: Only a portion of the pork and marinade were used for the demonstration photo.)

Step 10

Step 11

Cooking over high heat can burn the outside before the inside is cooked. Therefore, cook over medium heat, allowing the marinade to reduce and caramelize slightly. Once one side is golden brown, flip the pork and cook the other side until done. When the pork is mostly cooked, use scissors or a knife to cut it into bite-sized pieces.

Step 11

Step 12

As the pork cooks, the sweet and savory marinade will reduce and cling to the meat, creating an irresistible glaze. Avoid cooking over excessively high heat, as the marinade can burn quickly. Adjust the heat to medium-low or low, and continue cooking until the sauce has almost completely reduced. Your delicious sweet and savory marinated pork neck is ready!
