Cooking Instructions
Step 1
First, roughly chop 1 stalk of green onion into about 3-4cm pieces. Cut the 600g pork belly into 3 large chunks, suitable for placing in a pot or rice cooker. This size helps the seasoning penetrate evenly for a tastier result.
Step 2
Now, place the prepared pork belly chunks and the ripe kimchi (about 1/4 head) into your rice cooker. If the kimchi is too large, you can cut it down a bit.
Step 3
Tuck the large pieces of green onion and the 6 whole garlic cloves among the pork and kimchi. Leaving the garlic whole allows its mild aroma to infuse gently into the stew.
Step 4
The key to delicious kimchi stew lies in the sauce! In a bowl, combine 500ml of rice water with 1 Tbsp sugar, 1 Tbsp doenjang, 2 Tbsp soy sauce, 3 Tbsp mirin, and 1 Tbsp gochugaru. Whisk everything together. Doenjang plays a surprisingly important role in achieving a deep, savory flavor in kimchi stew.
Step 5
Pour the prepared sauce over the ingredients in the rice cooker, ensuring they are mostly submerged. Close the lid and select the ‘Steam’ or ‘Multi-Cook’ function, then set it to cook for 40 minutes. The rice cooker’s steaming function is excellent for tenderizing ingredients and allowing flavors to meld deeply.
Step 6
After 40 minutes, your fragrant and delicious pork belly kimchi stew is ready! Using chopsticks or tongs, cut the large pieces of pork belly into bite-sized portions. Gently separate the kimchi pieces as well.
Step 7
Arrange the tender kimchi and pork belly in a serving bowl. Generously ladle the rich, flavorful stew broth from the rice cooker over everything. This dish is so satisfying, it’s known to disappear quickly – a true ‘rice thief’! Enjoy your homemade masterpiece!
