Enjoy a universally loved side dish, Korean fish cake stir-fry, made even more delicious with Baek Jong-won’s recipe. It’s simple, foolproof, and a perfect addition to any meal, guaranteed to be a rice-lover’s delight!
Main Ingredients- 10 sheets of square fish cakes (eomuk)
- 1/2 onion
- 1/3 green onion stalk
- 1 Korean chili pepper (optional, for spice)
Stir-Frying Seasoning- 2 Tbsp cooking oil
- 1 Tbsp minced garlic
- 2 Tbsp cooking oil
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, cut the fish cakes into bite-sized pieces, about 1cm thick. Slice the onion to a similar size as the fish cakes. Finely chop the green onion and Korean chili pepper. Having all your ingredients prepped makes the cooking process much smoother.
Step 2
Heat a pan over medium heat and add 2 Tbsp of cooking oil. Add 1 Tbsp of minced garlic and stir-fry slowly until fragrant and lightly golden, being careful not to burn it. This creates a flavorful garlic-infused oil. Once the garlic aroma is strong, proceed to the next step.
Step 3
Once the garlic oil is ready, add the sliced fish cakes and onions to the pan. Stir-fry them together until the onions become slightly translucent.
Step 4
To prevent the fish cakes and onions from sticking to the pan and to ensure the sauce coats evenly, add 1/2 cup (about 100ml) of water. Stir-frying with water helps prevent burning and keeps the ingredients moist.
Step 5
Now it’s time to add the delicious sauce ingredients. Add 1 Tbsp sugar, 4 Tbsp soy sauce, and 1 Tbsp corn syrup directly into the pan. Feel free to adjust the amount of sugar or corn syrup to suit your taste preference.
Step 6
Stir-fry the ingredients to combine them well with the sauce. Add the chopped green onions and Korean chili peppers. If you prefer a spicier dish, add more chili peppers or increase their quantity. Continue to stir-fry until all ingredients are well coated with the sauce.
Step 7
Simmer the mixture, stirring occasionally, until most of the liquid has evaporated and the sauce has thickened to a glaze. This process allows the fish cakes to absorb the flavors beautifully. Be careful not to overcook, as too much liquid reduction can make the dish dry.
Step 8
Just before turning off the heat, drizzle in 0.5 Tbsp of sesame oil. Adding sesame oil at the end preserves its fragrant aroma.
Step 9
Finally, sprinkle 0.5 Tbsp of toasted sesame seeds over the stir-fry and mix gently. The sesame seeds add a nutty flavor and a nice visual touch.
Step 10
Voila! Your homemade Baek Jong-won style fish cake stir-fry is ready. Serve it over warm rice for an incredibly delicious meal. Enjoy this classic Korean side dish with your family! ^^
