Main Ingredients- Pork Belly (thinly sliced) 300g (choose a cut with a good fat-to-meat ratio)
- Aged Kimchi 100g (well-fermented and sour kimchi)
- Ramen Noodles 1 pack (choose your favorite brand)
- Scallion 1/2 stalk (chopped)
Seasoning and Extras- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced Garlic 1 Tbsp
- Ramen Soup Base (included in ramen packet)
- Vegetable Flakes (included in ramen packet)

Cooking Instructions
Step 1
First, prepare all your ingredients. Wash and chop everything as needed. Chop the scallions finely to add their aromatic flavor. It’s helpful to cut the aged kimchi into bite-sized pieces with scissors for easier cooking.
Step 2
Heat a pan over medium-high heat and add the thinly sliced pork belly. Cook until it’s nicely browned and slightly crispy. If there’s excessive oil, you can gently blot it with a paper towel for a cleaner taste.
Step 3
Once the pork belly has rendered some of its fat, add the chopped scallions to the pan and sauté them along with the pork. The fragrant aroma of the scallions will meld with the rendered fat, making the dish even more flavorful.
Step 4
When the pork and scallions are cooked and fragrant, add the chopped aged kimchi, the ramen soup base and vegetable flakes from the ramen packet, gochugaru (chili flakes), and minced garlic. Stir-fry everything together, focusing on allowing the kimchi to soften and the seasonings to coat the pork thoroughly.

As you stir-fry, the seasonings will adhere to the pork, and the tangy kimchi will blend with the savory pork fat, creating a flavor profile reminiscent of delicious Jeyuk Bokkeum (spicy stir-fried pork). This combination is so good, it could even be a standalone side dish for rice!
Step 6
Once the stir-fried ingredients have absorbed all the delicious flavors, pour in 500ml of water and bring it to a rolling boil over high heat. The broth will start to develop its savory essence as it heats up.
Step 7
When the broth is vigorously boiling and the seasonings have dissolved well, add your ramen noodles. Make sure to separate the noodles so they cook evenly and absorb the flavorful broth.
Step 8
Once the noodles are in, continue to boil for about 3 minutes. Be careful not to overcook them, as they can become mushy. Check for your desired noodle texture – a slightly firm, ‘al dente’ or ‘kkodle-kkodle’ (chewy) state is often preferred. Perfectly chewy noodles are key!
