  • 1/2 head of well-fermented Napa cabbage kimchi

Seasoning & Others
  • 2 Tbsp perilla oil (Korean sesame oil)
  • 2 Tbsp sugar (adjust based on kimchi’s sourness)
  • 1 Tbsp toasted sesame seeds
  • A tiny pinch of black pepper (optional)
  • 100ml water (approx. 1/2 cup)

Cooking Instructions

Step 1

First, prepare your well-fermented Napa cabbage kimchi. Try to remove as much of the filling from the kimchi as possible; this will result in a cleaner and more delicious stir-fried kimchi. *Using fully aged kimchi, rather than slightly fermented ones, is key to achieving a deep, savory flavor.

Step 2

Chop the prepared kimchi into bite-sized pieces, about 2-3cm wide. Place all the chopped kimchi into a frying pan.

Step 3

Now it’s time to season. Add 2 tablespoons of perilla oil and 2 tablespoons of sugar to the kimchi in the pan. If your kimchi is very sour, feel free to add a little more sugar. A tiny pinch of black pepper can also enhance the aroma if you like. *You can omit the black pepper if desired.

Step 4

Begin stir-frying the kimchi over high heat. Pour in 100ml of water (about half a standard paper cup). This prevents the kimchi from sticking to or burning in the pan and helps it cook evenly, retaining a pleasant texture. Adding water also ensures the ingredients blend well and the seasoning coats the kimchi uniformly.

Step 5

Keep the heat on high and stir-fry briskly for about 5 minutes. The goal is to keep the kimchi delightfully crisp, so avoid overcooking it until it becomes mushy. Toss or stir the kimchi frequently to ensure even cooking.

Step 6

Finally, finish your stir-fried kimchi by sprinkling 1 tablespoon of toasted sesame seeds over the top. The nutty aroma of the sesame seeds adds a wonderful finishing touch, making this dish even more appealing. Serve it over warm rice for a delightful meal!
