Ingredients- Cream cheese 410g
- Granulated sugar 123g
- Eggs 135g
- Vanilla extract 3 drops
- Heavy cream 135ml
Cooking Instructions
Step 1
Begin by softening 410g of cream cheese. Use a spatula or whisk to work it until it becomes smooth and creamy, free of any lumps. This smooth base is crucial for a velvety texture.
Step 2
Gradually add 123g of sugar to the softened cream cheese, mixing until the sugar is fully dissolved and the mixture resembles mayonnaise in consistency. Next, add 135g of eggs (approximately 2.5 eggs) one at a time, ensuring each is fully incorporated before adding the next. To prevent any eggy flavor, stir in 3 drops of vanilla extract.
Step 3
Gently warm 135ml of heavy cream until it’s lukewarm, then pour it into the cream cheese mixture. Whisk everything together until well combined and smooth. Warming the cream helps it emulsify better with the cream cheese and ensures a silky texture.
Step 4
Pour the cheesecake batter through a fine-mesh sieve into a 15cm (6-inch) round cake pan lined with parchment paper. Sieving creates an exceptionally smooth and luxurious final texture. The parchment paper should extend above the rim of the pan to accommodate the cake’s rise.
Step 5
Bake in a preheated oven at 230°C (450°F) for approximately 20 minutes. The cake will puff up significantly during baking and then deflate as it cools – this is completely normal. Baking time may vary depending on your oven.
