A friend recently shared a generous bounty of fresh corn with me! They received it from their in-laws and kindly passed some along, allowing me to enjoy the first corn of the year. I wanted to share the best way to cook this delicious harvest, including the ideal boiling time and how to store it for later enjoyment. This is an indispensable summer snack!
Ingredients- 5-7 fresh corn cobs
- Water (enough to cover the corn)
- 1 Tbsp sugar
- 1 Tbsp salt
Cooking Instructions
Step 1
Trim the tough bottom ends of the corn cobs. If the corn has silks attached, don’t discard them! Adding the silks to the boiling water can enhance the corn’s nutty flavor, adding a subtle but delightful depth.
Step 2
Don’t remove all the husks. Leaving one layer of husk attached helps to retain moisture during cooking. This ensures the corn kernels remain plump, tender, and succulent, just like freshly picked corn.
Step 3
Prepare the boiling liquid. Pour 4 cups of water into a pot and add 1 tablespoon of salt and 1 tablespoon of sugar. Taste the water; it should be slightly salty and sweet. This balanced seasoning will help bring out the natural sweetness of the corn.

Place the corn into the pot. The water level should be sufficient to cover at least half of the corn cobs. Adjust the water quantity as needed to ensure even cooking.

Boiling time! Cover the pot and boil over high heat for about 20 minutes. Then, reduce the heat to low and let it steam for an additional 10 minutes. This two-stage cooking process ensures the corn is cooked through and tender without becoming mushy. Total cooking time is approximately 30 minutes.

Once cooked, the corn will release a wonderfully rich, nutty aroma. Carefully drain the corn using a colander and let it sit for a moment.
