Step 1
First, to make the salted caramel sauce, place 50g of granulated sugar in a heavy-bottomed saucepan or pot. A wide, flat pan will help the sugar melt evenly.

Once the sugar begins to melt at the bottom of the pan, reduce the heat to low. To prevent burning, gently swirl or tilt the pan from side to side to help the sugar melt uniformly. Swirling the pan is better than stirring with chopsticks or a spatula, as it helps prevent the caramel from burning and achieves a smoother color.

When the sugar has melted into a beautiful golden caramel color, carefully and slowly pour in 50g of fresh heavy cream. Be cautious as the caramel may suddenly harden or splatter. Keep the heat low and add the cream quickly. Bubbles may form when the hot caramel meets the cream.
