This BBQ chicken recipe is a huge hit with kids! While marinating for just 1 hour yields great results, marinating overnight in the refrigerator makes the chicken incredibly tender, even when cooked straight from the fridge. I’m sharing my carefully balanced recipe for the perfect savory and slightly sweet flavor. This recipe serves 3-4 people.

Main Ingredients
  • 2 boneless, skinless chicken thighs (approx. 500g)

BBQ Marinade
  • 4 Tbsp Ketchup
  • 4 Tbsp Worcestershire Sauce
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Cooking Wine (e.g., Mirin or Shaoxing wine)
  • 2 Tbsp Honey
  • 1 Tbsp Minced Garlic
  • 2.5ml Minced Ginger (about 1/4 tsp)
  • 2 twists of Black Pepper

Cooking Instructions

Step 1

Trim any excess fat from the chicken thighs and cut each thigh in half lengthwise. Then, cut each half into 4 equal pieces, creating bite-sized portions. Place the chicken pieces in a resealable plastic bag. In a separate bowl, combine all the BBQ marinade ingredients and whisk until well blended. Pour the marinade over the chicken in the bag, seal, and toss to coat evenly. Marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum tenderness.

Step 2

Heat a medium-sized skillet over medium heat with a little cooking oil. Add the marinated chicken pieces to the hot pan and sear for 1 minute without stirring. Once lightly browned, cover the pan with a lid, reduce the heat to medium-low, and cook for another 2 minutes.

Step 3

After 2 minutes, flip the chicken pieces over. Cover the pan again and continue to cook on medium-low heat for another 2 minutes. Finally, remove the lid. Carefully wipe away any excess liquid or oil from the pan with a paper towel, then continue to cook the chicken for about 2 more minutes, allowing it to brown nicely and develop a delicious caramelization. Keep the heat on medium-low throughout this process.

Step 4

Once cooked, transfer the BBQ chicken to a serving plate. It pairs wonderfully with a side of fresh salad or grilled vegetables. For a beautiful presentation, finely chop some salad leaves and sprinkle them over the chicken as a garnish.
