The Bibigo Burdock Beef Japchae, Tofu Cheonggukjang Yeolmu Bibimbap: A Convenient and Healthy Meal
When the weather gets hot and cooking for long hours feels daunting, here’s a super simple and healthy meal recipe that’s perfect for entertaining guests! Using The Bibigo products, you can easily create elegant japchae and refreshing yeolmu bibimbap. This recipe balances both taste and health – it’s truly excellent!
Japchae Ingredients- The Bibigo Burdock Beef Stir-fry Sauce 2 packs
- 300g Glass noodles
- 60g Onion (about 1/4 medium onion)
- 60g Carrot (about 1/4 medium carrot)
- 60g Bell pepper (use various colors for visual appeal)
- 60g Chives (about 1/4 bunch)
- 1 Tbsp Minced garlic
Japchae Seasoning- 5 Tbsp Soy sauce
- 3 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
Bibimbap Ingredients- The Bibigo Tofu Cheonggukjang Stir-fry Sauce 1 pack
- 1 cup Yeolmu kimchi (young radish kimchi)
- 3 Lettuce leaves
- 1 Egg
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame oil
- 5 Tbsp Soy sauce
- 3 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
Bibimbap Ingredients- The Bibigo Tofu Cheonggukjang Stir-fry Sauce 1 pack
- 1 cup Yeolmu kimchi (young radish kimchi)
- 3 Lettuce leaves
- 1 Egg
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame oil
Cooking Instructions
Step 1
Prepare the vegetables for the japchae. First, wash and thinly julienne the onion, carrot, and bell pepper. Cut the chives into approximately 5cm lengths, similar to the size of the other vegetables, for an appealing presentation.
Step 2
Lightly oil a deep pan and stir-fry the julienned onion, carrot, and bell pepper over medium heat. Cook until the vegetables are just tender, then season lightly with salt. Next, add the 2 packs of The Bibigo Burdock Beef Stir-fry Sauce to the pan and cook until the sauce has reduced and thickened. Set the stir-fried vegetables and sauce aside on a plate.
Step 3
Meanwhile, boil the glass noodles in water for exactly 6 minutes. After boiling, rinse the noodles quickly under cold water to remove excess starch and drain them well. Lightly oil a clean pan and add the drained glass noodles. Stir in 5 Tbsp soy sauce, 3 Tbsp oligosaccharide, and 1 Tbsp minced garlic, stir-frying until the noodles have evenly absorbed the seasoning. In a large bowl, combine the seasoned glass noodles, the stir-fried vegetables and burdock beef sauce, and the chives. Mix everything thoroughly.
Step 4
Taste the japchae and adjust the seasoning with soy sauce if needed. Finally, drizzle generously with sesame oil and sprinkle with toasted sesame seeds. Your incredibly simple Burdock Beef Japchae, rivaling restaurant quality, is now complete! It’s best enjoyed immediately while warm.
Step 5
Now, let’s make the yeolmu bibimbap! Heat the The Bibigo Tofu Cheonggukjang Stir-fry Sauce pack in boiling water for about 6 minutes. Place warm rice in a large bowl. Arrange the julienned lettuce and the crisp yeolmu kimchi attractively over the rice. Spoon the heated tofu cheonggukjang sauce generously into the center. Top with a fried egg.
