Chewy Semi-Dried Flatfish Braised in Sweet and Savory Teriyaki Sauce

It’s surprisingly easy to make and perfect for special occasions or to impress guests.
Main Ingredients- 2 pieces Semi-dried flatfish
- 1 Onion
- 1 Green chili pepper
- 1 Red chili pepper
- 6 Tbsp Store-bought Teriyaki sauce
Homemade Teriyaki Sauce Ingredients (Optional)- 8 Tbsp Soy sauce
- 3 Tbsp Vinegar
- 4 Tbsp Sugar
- 4 Tbsp Mirin (or cooking sake)
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Oligosaccharide
- 1/2 Tbsp Ginger powder (or grated ginger)
- 1/4 cup Water (approx. 50ml)
- 8 Tbsp Soy sauce
- 3 Tbsp Vinegar
- 4 Tbsp Sugar
- 4 Tbsp Mirin (or cooking sake)
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Oligosaccharide
- 1/2 Tbsp Ginger powder (or grated ginger)
- 1/4 cup Water (approx. 50ml)
Cooking Instructions
Step 1
Semi-dried flatfish has a much chewier texture compared to fresh flatfish. It’s convenient because it requires no further preparation and can be cooked immediately. Make sure the fish is nicely dried and firm.
Step 2
If you’re making homemade teriyaki sauce, combine all sauce ingredients in a pot and bring to a boil over medium-high heat. Once boiling, reduce heat to medium-low and simmer for 1-2 minutes. Turn off the heat, let it cool completely, and then store in the refrigerator. This makes a versatile all-purpose sauce. (Skip this step if using store-bought sauce.)
Step 3
Peel the onion, cut it in half, and then slice it into 0.5cm thick strips. Wash the green and red chili peppers, remove the stems, and slice them diagonally about 0.5cm thick. For a spicier kick, you can use Korean green chili peppers (cheongyang peppers).
Step 4
Make 2-3 shallow cuts on each side of the prepared semi-dried flatfish. This helps the sauce penetrate better and speeds up the cooking process.
Step 5
Heat a pan over medium heat and place the semi-dried flatfish in it. Grill both sides until golden brown and slightly crispy. Using a double-sided grill pan allows you to cook it without oil. If using a regular frying pan, add a very small amount of cooking oil.

The flatfish is ready when it’s golden brown on both sides. It’s delicious eaten just like this, dipped in a wasabi soy sauce, but today we’re going to braise it in teriyaki sauce.
Step 7
On top of the grilled flatfish, sprinkle the sliced onion and diagonally cut chili peppers.
Step 8
Pour the 6 tablespoons of teriyaki sauce evenly over the flatfish and vegetables. Now, reduce the heat to medium-low and let the fish simmer and braise in the sauce.
Step 9
During cooking, use a spoon or ladle to baste the fish and vegetables with the sauce from the pan a couple of times. This ensures they absorb the flavor more thoroughly. Since the fish is already cooked, simmer just until the sauce has thickened and the ingredients are tender.
Step 10
Once the sauce has reduced and become slightly thick, turn off the heat. Plate the finished Teriyaki Braised Semi-Dried Flatfish nicely.
