Bossam Ingredients

  • 400ml Water
  • 15 bottles Yogurt (total 975ml)
  • 4 bottles Soy Sauce (based on bottle height)
  • 1.2kg Pork Shoulder

Chanto-pyo Ssamjang

  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Doenjang (Korean soybean paste)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Chopped Green Onion
  • 1 Tbsp Chopped Onion
  • 1 Tbsp Perilla Oil
  • A pinch of Sesame Seeds (sprinkled)

Cooking Instructions

Step 1

Pour 400ml of fresh water into a pot. This will be the base broth for boiling the pork.

Add all 15 bottles (total 975ml) of plain yogurt to the pot. Yogurt helps tenderize the meat and remove any gamey smell.

Use an empty yogurt bottle to measure the soy sauce. Fill an empty bottle with soy sauce and pour it in 4 times. (Approximately 200ml x 4 = 800ml expected)

Prepare 1.2kg of pork shoulder. Gently pat dry any excess blood with paper towels. Then, make shallow cuts about 2-3cm apart on the meat. This helps the flavors penetrate better and makes the cooked pork more tender. Place the prepared pork into the pot.

Now, let’s start cooking. First, bring the broth to a boil over high heat. Once it starts boiling, reduce the heat to medium, cover the pot, and simmer for about 40 minutes. Flipping the meat halfway through will ensure even cooking.

While the pork is simmering, let’s make the ‘Chanto-pyo Ssamjang’. In a bowl, combine 1 Tbsp minced garlic, 1.5 Tbsp doenjang, 1 Tbsp gochujang, 1 Tbsp finely chopped green onion, and 1 Tbsp chopped onion. Finally, add 1 Tbsp of perilla oil for a nutty flavor and sprinkle with sesame seeds. Mix well to create a delicious ssamjang.

After approximately 40 minutes, remove the well-cooked pork from the pot. Insert a chopstick into the meat; if no pink liquid comes out, it’s ready. Be careful not to overcook, as it can become tough.
