Here’s a delightful recipe for Spinach and Egg Stir-fry, a perfect dish for your little ones packed with nutrients from spinach and soft eggs. This simple yet wholesome meal is sure to become a favorite at your baby’s mealtime!
Ingredients- Fresh spinach: 40g (about half a baby’s fist)
- Fresh egg: 1
- Cooking oil (e.g., olive or vegetable oil): 1 Tbsp
- Mild baby salt: 0.2 tsp (adjust to taste)
- Minced scallions (green onion): 1 Tbsp (use mostly the white parts)
Cooking Instructions
Step 1
Thoroughly wash the fresh spinach under running water to remove any dirt. Trim the tough ends of the spinach and finely chop it into pieces that are easy for your baby to eat, about 1-2 cm in length.
Step 2
In a clean bowl, crack one egg. Add about 0.2 tsp of mild baby salt. Whisk gently with chopsticks until the yolk and white are well combined. You can adjust the salt amount based on your baby’s age and preference.

Prepare about 1 Tbsp of minced scallions. Using the white parts of the scallions will make them softer for your baby to chew.

Heat a frying pan over medium-low heat and add 1 Tbsp of cooking oil. Gently stir-fry the minced scallions until fragrant, being careful not to burn them.

Once the scallions are fragrant, push them to one side of the pan to create space. Pour the beaten egg mixture into the empty space. Gently scramble the eggs with chopsticks or a spatula until they form soft curds. Be careful not to overcook them.

Once the scrambled eggs are cooked, mix them with the sautéed scallions. Then, add the chopped spinach and stir-fry everything together. It’s best to stir-fry over high heat for a short time to prevent the spinach from becoming too mushy.
