- 2 Tbsp sesame oil

Cooking Instructions
Step 1
First, prepare the fresh spinach. Carefully trim the root ends of the spinach and wash the leaves thoroughly multiple times to remove any dirt or impurities. We’ll make delicious seasoned spinach with this clean, fresh spinach.
Step 2
In a pot, add 300ml of water and 1 tablespoon of salt. Bring the water to a rolling boil. Blanching spinach in salted boiling water helps maintain its vibrant green color and freshness.
Step 3
Once the water is boiling vigorously, turn off the heat and add all the prepared spinach. Spinach wilts quickly, so don’t worry about adding too much. Using a spatula or spoon, gently move the spinach back and forth in the hot water for about 4 seconds after turning off the heat. Then, immediately remove it. Be careful not to over-blanch, as it can become mushy.
Step 4
Quickly rinse the blanched spinach under cold running water to cool it down. Once completely cooled, squeeze out as much water as possible by hand. Properly draining the spinach prevents it from becoming watery and helps the seasoning adhere well.
Step 5
Now it’s time to season the drained spinach. Add 2 tablespoons of fish sauce (or soy sauce), 1 tablespoon of minced garlic, 2 tablespoons of roasted perilla seeds powder, and 2 tablespoons of sesame oil for extra flavor. You can adjust the amount of fish sauce according to your family’s taste.
Step 6
Gently mix everything together until well combined. Your sweet and fresh winter spinach seasoning is ready! Enjoy this seasonal delight.
Step 7
If you have a little leftover seasoned spinach, don’t worry! We’ll use it to make a simple and delicious egg custard. You’ll need 79g of the prepared seasoned spinach (or blanched spinach), 3 large eggs, 1 tablespoon of cooking wine or mirin to eliminate any eggy smell, 1 cup (200ml) of water or dashi stock for a smooth texture, 2 tablespoons of sesame oil, 1 tablespoon of minced garlic, and a pinch of salt for seasoning.
Step 8
Prepare 79g of the seasoned spinach. This amount is perfect for making a side dish of egg custard for one meal.
Step 9
In a large bowl, crack the 3 eggs and add 1 tablespoon of cooking wine. Whisk thoroughly until the eggs are well beaten. You can add a pinch of salt for a subtle seasoning if you like. Now, add the spinach, which you’ve chopped into bite-sized pieces with scissors, to the egg mixture and combine well.
Step 10
Here’s the secret to making easy microwave egg custard! First, pour 1 tablespoon of sesame oil into a microwave-safe glass dish. Use a paper towel to spread the oil evenly around the inside of the dish. This prevents the custard from sticking and ensures a clean release.
Step 11
Pour the spinach and egg mixture into the prepared oiled dish. It’s best to fill the dish only about two-thirds full to prevent overflow during cooking.
Step 12
Now, microwave it for 3 minutes. Cooking times may vary depending on your microwave’s power, so it’s good to start with a shorter time and check for doneness.
Step 13
Check the egg custard after 3 minutes. If it’s not fully cooked, microwave it for an additional 2 minutes. You can test for doneness by inserting a toothpick or skewer; if it comes out clean, it’s ready.
Step 14
Voila! Your delicious spinach and egg custard is ready. It’s best to let it cool slightly after removing it from the microwave; this helps it set better, making it easier to slice.
Step 15
Once slightly cooled, cut the egg custard into bite-sized pieces. Your tender and savory spinach and egg custard is complete! This is a nutritious side dish that even children will love.
Step 16
With its savory flavor and tender texture, this spinach and egg custard is sure to please even the pickiest eaters! You can create such a wonderful and nutritious side dish by using up leftover spinach.
