I’m sharing a recipe for a simple boneless chicken feet stew made with fresh boneless chicken feet from my in-laws. The combination of chewy chicken feet and spicy-sweet sauce makes it an irresistible snack. Learn how to enjoy a restaurant-quality dish at home with this easy recipe!
Main Ingredients- Boneless Chicken Feet (Harim brand recommended)
- Water
- 1 bunch Green Onions (cut into large pieces)
- 2 Korean Red Peppers (sliced thinly)
- 1 Onion (julienned)
- A pinch of Sesame Seeds (for garnish)
- 1 Tbsp Cheongyang Pepper Powder (for spice adjustment)
Spicy Sauce- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes, fine)
- 3 Tbsp Sugar
- 3 Tbsp Soy Sauce
- 1 Tbsp Plum Extract (or corn syrup)
- 1 Tbsp Minced Garlic
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes, fine)
- 3 Tbsp Sugar
- 3 Tbsp Soy Sauce
- 1 Tbsp Plum Extract (or corn syrup)
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, thinly julienne 1 onion to add sweetness and flavor to the dish, and thinly slice 2 Korean red peppers for a spicy kick.
Step 2
This step is crucial for removing any gamey odor from the boneless chicken feet. Bring a generous amount of water to a boil in a pot, then add the boneless chicken feet. Blanch them just until they are slightly cooked, about 2-3 minutes. Be careful not to overcook, as they can become mushy.

Here are the blanched boneless chicken feet. They are now ready for the main seasoning!

Let’s make the star of the dish – the sauce! In a bowl, combine 3 Tbsp gochujang, 3 Tbsp fine gochugaru, 3 Tbsp sugar, 3 Tbsp soy sauce, 1 Tbsp plum extract, and 1 Tbsp minced garlic. Mix well until there are no lumps to create a smooth sauce.

In the pan where you’ll be stir-frying the chicken feet, add the julienned onions and sliced Korean red peppers first. The vegetables will soften slightly, adding sweetness and aroma.

Now, generously spoon the prepared sauce over the chicken feet. Add just enough water to cover the boneless chicken feet. Be mindful not to add too much water, as it can dilute the flavor. Adjust the amount as needed.

Start by boiling over high heat until it comes to a rolling boil. Then, reduce the heat to low and let it simmer. Allow the sauce to thicken and coat the chicken feet nicely as it reduces.

Once the sauce has thickened to your liking, add the bunch of green onions, cut into large pieces, for a fresh aroma. Taste the stew at this point. If you prefer it spicier, add 1 Tbsp of Cheongyang pepper powder for an extra kick.
