  • 1 Onion
  • 2 Green onions

Marinade Ingredients

  • 15 Tbsp Soy sauce
  • 3 Tbsp Minced garlic
  • 1 tsp Grated ginger
  • 5 Tbsp Corn syrup (or oligosaccharide)
  • 1 tsp Black pepper
  • 1 Tbsp Sugar
  • 3 Tbsp Rice wine (Mirin or similar)

For the best texture, ask your butcher to thinly slice the pork shoulder, ideally while it’s partially frozen. This ‘frozen slice’ method is key for achieving thin, tender pieces perfect for bulgogi, as fresh pork tends to be cut thicker.

In a large bowl, combine the thinly sliced pork with all the marinade ingredients: soy sauce, minced garlic, grated ginger, black pepper, rice wine, corn syrup, and sugar. Gently mix with your hands until the pork is evenly coated. Tip: For an extra tender and flavorful result, consider adding a packet of apple, onion, or pear juice to the marinade. This helps tenderize the meat and adds a delightful sweetness and depth.

Add the onion, sliced not too thinly, to the marinated pork. For the green onions, use only the white parts, cut them into 5cm lengths, and then quarter them lengthwise. Mix everything thoroughly to ensure all ingredients are well combined with the marinade.
