A Steak That Hits the Spot! Tender Sirloin Steak with a Korean Twist
I’ve made a sirloin steak for a complete meal. When you’re unsure what side dishes to make, grilling a piece of good quality meat is all you need for a steak that rivals any restaurant. This recipe features a tender sirloin steak prepared with a unique marinade that enhances its flavor and texture.
Steak Ingredients- 2 sirloin steaks, suitable for grilling
- 1/2 onion
- 2 Tbsp olive oil
- Pinch of coarse salt
- Pinch of freshly ground black pepper
Cooking Instructions
Step 1
First, prepare the marinade that will determine the steak’s flavor. Finely grate the fresh onion using a grater and carefully strain to extract only the juice. (If you have pre-frozen onion juice, you can thaw and use that.)
Step 2
Place the sirloin steaks in a wide bowl. Sprinkle evenly with the extracted onion juice, olive oil, coarse salt, and freshly ground black pepper. Gently massage the ingredients into the steak with your hands to help the marinade penetrate better. Let it marinate in the refrigerator for at least 30 minutes. If you have more time, marinating for about an hour will make it even more tender.
Step 3
Prepare the vegetables for garnish to accompany the steak. Cut the carrot, king oyster mushroom, and onion into bite-sized pieces (about 1 cm thick). Cutting them into larger pieces like this will give them a better texture when cooked.
Step 4
Heat a pan over medium heat, add a little olive oil, and sauté the prepared vegetables until nicely browned. Cook them slowly to bring out their natural sweetness. Set the cooked vegetables aside on a plate.
Step 5
Now it’s time to cook the steak. Heat a grill pan or a heavy-bottomed skillet over high heat until very hot. Place the marinated sirloin steak in the pan. Sear the steak over high heat for the first 1-2 minutes to lock in the juices. When the bottom of the steak turns a light gray color, reduce the heat to medium. When you see juices starting to pool on the surface of the steak, it’s time to flip it.
Step 6
Flip the steak and continue cooking. Once it has beautiful grill marks, deglaze the pan by pouring the plum wine or red wine around the edges of the steak. The alcohol will evaporate, infusing the steak with a lovely aroma. When the wine has mostly reduced, remove the steak from the pan and let it rest for a few minutes. Resting allows the juices to redistribute throughout the meat, resulting in a more succulent and tender steak.
Step 7
On a warm plate, artfully arrange the beautifully cooked sirloin steak, a side of rice, and the golden-brown sautéed vegetables. If you like, you can also add a sweet dessert like candied sweet potatoes for a truly complete feast. Enjoy your delicious meal!
