Today, we’re making tender sirloin neobiani, boasting a luxuriously soft texture and rich flavor. 🙂
Ingredients- Beef sirloin 530g
- Scallion 1/2 stalk
- Pear 1/2 fruit
- Onion 1/2 fruit
- King oyster mushrooms 2ea
- Korean perilla leaves 20 leaves
- Soy sauce 3 Tbsp
- Sugar 2 tsp
- Sesame oil 1 Tbsp
- Sesame seeds (crushed) 1/2 Tbsp
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
First, let’s prepare the Korean perilla leaves that will be served alongside. Wash them thoroughly, pat them dry, then roll them up tightly and slice thinly into ribbons. This makes them elegant and easy to eat when served with the meat or as a garnish.
Step 2
Next, slice the king oyster mushrooms thinly, similar to the perilla leaves. Mushrooms add a delightful chewy texture and enhance the rich flavors of the meat when grilled together.
Step 3
For the marinade, finely chop the white parts of the scallion. These chopped scallions will blend well into the sauce and add a fresh, aromatic quality.
Step 4
Now, grate the pear and onion using a grater. These juices will act as a natural tenderizer, making the beef incredibly soft and adding a subtle, natural sweetness.
Step 5
Strain the grated pear and onion mixture through a fine-mesh sieve to collect only the clear juice. Using only the juice ensures a clean marinade that coats the meat evenly.
Step 6
Let’s make the delicious marinade! In a bowl, combine the strained pear and onion juice, chopped scallions, 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, and 2 teaspoons of sugar. Whisk everything together until well combined.
Step 7
Finally, add 1/2 tablespoon of crushed sesame seeds and 1 tablespoon of sesame oil to the bowl. Mix thoroughly once more to create your flavorful neobiani marinade. The aroma alone will be mouthwatering!
Step 8
Gently pound the sirloin slices with a meat tenderizer or the back of a knife until they are thinly spread out. Be careful not to pound too hard, as this can release the juices. Carefully brush the prepared marinade evenly over each slice of beef, ensuring it covers the surface thoroughly for maximum flavor penetration.
Step 9
Cover the marinated beef tightly with plastic wrap or place it in an airtight container. Let it marinate in the refrigerator for 20 to 30 minutes. This resting period allows the meat to become more tender and fully absorb the delicious marinade.
Step 10
Now, let’s grill the meat! Heat a non-stick pan over medium-low heat (no oil needed). Place the marinated beef slices onto the hot pan. Cooking over gentle heat prevents the marinade from burning too quickly.
Step 11
Once the beef is nicely browned on both sides, cut it into bite-sized pieces. It’s important not to overcook the meat to keep it juicy and tender.
Step 12
Finally, add the sliced king oyster mushrooms to the pan and grill them alongside the beef until they are golden brown and slightly crispy. The mushrooms will absorb the meat’s flavors and add a beautiful finish to the dish. Your delicious sirloin neobiani is now ready to be enjoyed!
Step 13
Serve hot with steamed rice or as part of a lettuce wrap. Enjoy!
