Main Ingredients- 1 bag Pulmuone Shrimp Dumplings (approx. 300-400g)
- 1 fresh Shiitake mushroom
- 1/4 bag Enoki mushrooms (approx. 50g)
- 3 Tbsp finely chopped scallions
Cooking Instructions
Step 1
First, prepare your vegetables for the shrimp wonton soup. Remove the stems from the shiitake mushroom and slice it thinly. Trim the base of the enoki mushrooms and separate the strands. Finely chop the scallions. If you’d like to add an omelet garnish, whisk the egg, cook it thinly in a lightly oiled pan over low heat until set, let it cool, then julienne it into thin strips. (Tip: Use low heat and minimal oil for a beautiful omelet!)
Step 2
Let’s start cooking the wonton soup! Pour 1L of anchovy-kelp broth into a pot and bring it to a boil over medium heat. Once the broth is simmering, carefully add the Pulmuone shrimp dumplings.
Step 3
Let the dumplings cook for about 5 minutes, or until they start to float to the surface. Once they float, add 1 Tbsp of soy sauce (or tuna extract) and 1 Tbsp of mirin. Simmer for another moment. This step helps to remove any undesirable odors from the dumplings and enhances their savory flavor.
Step 4
Now, add all the prepared shiitake and enoki mushrooms to the pot. Simmer briefly until the vegetables are tender but still slightly crisp. (Avoid overcooking, as the vegetables can become mushy.) Finally, sprinkle in a pinch of black pepper and season with salt to your preference. This will result in a clean and deep-tasting broth.
Step 5
Ladle the finished shrimp wonton soup into serving bowls. Garnish beautifully with the chopped scallions and the julienned egg omelet. The combination of the chewy wontons and the warm, rich broth is truly fantastic!
Step 6
The shrimp wontons are already well-seasoned inside, so you can enjoy them without any dipping sauce. The delightful chewiness of the dumplings paired with the refreshing broth creates a truly irresistible flavor.
Step 7
My family loves this dish! Enjoy a satisfying and happy meal with a comforting bowl of warm soup. (Tip: If making the omelet garnish is too much hassle, you can also pour a whisked egg into the simmering broth to create a soft, egg-drop soup-like texture!)
