Step 1
Let’s start making delicious shrimp fried rice! Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry until fragrant, creating fragrant green onion oil. (Using frozen chopped green onions makes this step even easier!) Once the aroma of green onions is prominent, push them to one side of the pan. Crack 1 egg into the empty space and scramble it. Cooking the egg directly in the same pan reduces washing up and saves time, making it very efficient for busy mornings.
Step 2
When the scrambled egg is softly cooked, gently mix it with the green onions and stir-fry together. Now it’s time for the star ingredient: shrimp! If using cocktail shrimp, soak them in cold water briefly to thaw, then rinse under running water. (If using large shrimp, remove the shells and devein.) Add the shrimp to the pan and stir-fry with the green onions and egg.

Once the shrimp have turned pink and all ingredients are well combined, pour 1 tablespoon of soy sauce to one side of the pan and let it sizzle slightly. This caramelizes the soy sauce, bringing out a richer flavor in your fried rice.

Stir-fry thoroughly until the rice grains are separated and all ingredients are harmoniously blended. Taste and adjust seasoning as needed.
