Cooking Instructions
Step 1
First, soak the pork ribs in cold water for about 1 hour to remove excess blood. Soaking helps to eliminate any gamey flavors, ensuring a cleaner taste in your braised ribs.
Step 2
During the soaking time, change the water once or twice to effectively drain out the blood. Continue this process until the water runs clear for the best results.
Step 3
Place the drained pork ribs into a pressure cooker. Add enough cold water to completely cover the meat. Add all the ‘Ingredients for Boiling Ribs’ (onion, scallion, bay leaves, whole garlic, mirin, whole peppercorns). Close the lid securely. Bring to a boil over high heat. Once the pressure indicator starts whistling, reduce the heat to low and cook for 25-30 minutes. (This is the total cooking time after reaching pressure).
Step 4
Pork, compared to beef, cooks more quickly. Overcooking can cause the meat to become mushy and lose its shape. With a pressure cooker, cooking for 25-30 minutes usually results in incredibly tender meat that still holds its shape perfectly. You might need to adjust this slightly depending on the thickness of the ribs and your specific pressure cooker model.
Step 5
Once cooked, carefully remove the ribs from the pressure cooker and let them cool slightly. Trim away any excess fatty parts or tough membranes for a cleaner presentation and better texture.

While the ribs are boiling, prepare the braising sauce. Peel and roughly chop the small apple, onion, and whole garlic cloves. Blend them until smooth. Using blended fruits and vegetables adds natural sweetness and depth of flavor.
Step 7
In a bowl, combine the blended apple, onion, and garlic mixture with soy sauce, sugar, corn syrup, mirin, and a pinch of black pepper. Stir well until all ingredients are thoroughly combined. Taste and adjust the sweetness or saltiness to your preference.

In a wide, deep pan or pot, arrange the trimmed, boiled pork ribs. Pour the prepared sauce evenly over the ribs.

Add about 200ml of the reserved cooking liquid from the pressure cooker (skim off any excess fat) to the pan. This liquid will add richness and depth to the sauce.

Place the pan over medium-high heat and bring the sauce to a boil. Once boiling, reduce the heat to low. Cover the pan (or leave uncovered if you prefer a thicker sauce) and simmer gently, allowing the sauce to reduce and the flavors to meld into the meat. Stir the ribs occasionally to ensure even coating.

While the ribs are braising, prepare the vegetables. Slice the carrot thinly into half-moon shapes. Cut the onion into roughly 1.5-2cm cubes. Chop the scallion into large pieces. Cutting the vegetables slightly larger prevents them from becoming too soft and mushy during cooking.

When the sauce has reached your desired consistency, add the prepared carrots, onions, and scallions to the pan. Cook for a few more minutes until the vegetables are tender-crisp. Be careful not to overcook the vegetables.
