Main Ingredients- Pork tenderloin 600g
- 1 small apple
- 3 slices fresh ginger
- 2 bay leaves
Braising Sauce- 6 Tbsp dark soy sauce
- 4 Tbsp corn syrup (or honey)
- 2 Tbsp cooking sake (or mirin, soju)
- 1 tsp oyster sauce
- 300ml water
- 6 Tbsp dark soy sauce
- 4 Tbsp corn syrup (or honey)
- 2 Tbsp cooking sake (or mirin, soju)
- 1 tsp oyster sauce
- 300ml water
Cooking Instructions
Step 1
Pat the pork tenderloin dry with paper towels to remove excess moisture. Then, soak it in cold water for 30 minutes to draw out the blood. Properly draining the blood is key to a clean-tasting braised dish.
Step 2
Slice the drained pork tenderloin into pieces slightly larger than bite-sized. They will shrink during cooking and can be easily shredded later.
Step 3
In a separate bowl, whisk together all the braising sauce ingredients: dark soy sauce, corn syrup, cooking sake, oyster sauce, and water. Mix well and set aside. Adjust the sweetness and saltiness to your preference.
Step 4
Place the sliced pork tenderloin in a pot. Quarter the apple, remove the core and seeds, and add it to the pot. Include the fresh ginger slices and bay leaves. Pour the prepared braising sauce over everything. Bring to a boil over high heat, then reduce to medium-low heat and simmer until about one-third of the sauce remains in the pot. Stir the meat occasionally to ensure even coating and cooking.
Step 5
Once the sauce has reduced, remove and discard the cooked apple, ginger, and bay leaves. Shred the braised pork into bite-sized pieces. Return the shredded pork to the pot with the remaining flavorful soy sauce. Add a little sesame oil (optional) and toss everything together to coat. Your tender and delicious soy-braised pork tenderloin is now ready!
