A delightful rice bowl featuring tender pork jowl and succulent eggplant. The flavorful special sauce is truly exceptional, promising a satisfying meal for everyone.
Main Ingredients- Pork jowl 250g (cut into bite-sized pieces)
- Eggplant 2 medium (cut into bite-sized pieces)
- Onion 1/2 (sliced)
- Green onion 1/2 stalk (sliced diagonally)
- Korean chili pepper (cheongyang) 1 (finely chopped)
- Vegetable oil 3 Tbsp
Amazing Rice Bowl Sauce- Minced garlic 1 Tbsp
- Black pepper to taste (a few twists)
- Oyster sauce 2 Tbsp
- Soy sauce 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp (for gloss and sweetness)
- Toasted sesame seeds 1 Tbsp
- Minced garlic 1 Tbsp
- Black pepper to taste (a few twists)
- Oyster sauce 2 Tbsp
- Soy sauce 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp (for gloss and sweetness)
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
First, prepare all your ingredients. Cut the pork jowl into bite-sized pieces. Slice the eggplants into similar sizes. Thinly slice the onion and cut the green onion diagonally to release its aroma. Finely chop the Korean chili pepper (removing seeds if you prefer less heat).
Step 2
Heat a wok or a deep pan over medium-low heat. Add 3 Tbsp of vegetable oil and 1 Tbsp of minced garlic. Gently sauté the garlic until fragrant, creating a garlic-infused oil. Be careful not to burn the garlic.
Step 3
Once the garlic is fragrant, add the pork jowl to the pan. Sprinkle with black pepper and stir-fry until the pork jowl is golden brown and slightly rendered. This step helps develop the rich flavor of the pork.
Step 4
When the pork jowl is nicely browned, add the sliced eggplant, onion, and green onion to the pan. Stir-fry with the pork for a minute or two until the vegetables begin to soften slightly.
Step 5
Now, it’s time for the sauce! Add all the sauce ingredients (oyster sauce, soy sauce, cooking wine, and oligosaccharide) to the pan. Increase the heat to medium-high and stir-fry quickly to coat all the ingredients evenly with the sauce. Let it simmer for a minute to allow the flavors to meld.
Step 6
Once the sauce has thickened slightly and coated everything beautifully, stir in the finely chopped Korean chili pepper and 1 Tbsp of toasted sesame seeds. Give it a final quick stir to combine. The chili adds a fresh kick, and the sesame seeds provide a nutty aroma.
Step 7
To serve, place a generous portion of warm cooked rice into a bowl. Top the rice with the delicious pork jowl and eggplant mixture. Enjoy your flavorful and quick homemade rice bowl! A fried egg on top is also a great addition.
