Ingredients

  • 2 Tbsp Doenjang (Korean Soybean Paste)
  • 10 cloves Whole Garlic
  • 1L Water (enough to cover the pork belly)
  • 1/2 cup Soju or Cheongju (Rice Wine) (Mirin can be substituted)
  • A little chopped Green Onion (for garnish)
  • Fresh Kimchi Salad (Geotjeori) (as desired)

In a deep pot, add 1L of water. Stir in 2 tablespoons of doenjang and add the 10 whole garlic cloves. Doenjang helps to remove any unwanted odors from the pork and adds a savory depth of flavor.

For this recipe, we’re using a thick-cut pork belly, about 500g, meant specifically for boiling (Suyuk) rather than grilling. Using a thicker cut ensures the pork stays juicy and has a satisfying texture after cooking.

Carefully place the whole piece of pork belly into the pot with the water, doenjang, and garlic.

Add enough water to completely submerge the pork belly (about 1L). For enhanced flavor and to further reduce odor, pour in 1/2 cup of soju or cheongju (rice wine). If you don’t have these, mirin is an acceptable alternative. First, bring the water to a rolling boil over high heat. Once boiling, reduce the heat to medium and let it simmer gently until the pork is thoroughly cooked. For a 500g portion, aim to simmer for about 1 hour to ensure it’s tender all the way through. Adjust the cooking time based on the thickness and amount of pork.

After an hour, remove the perfectly boiled pork belly from the pot. You’ll notice it’s incredibly juicy inside and tender enough to be easily pierced with a fork. Now it’s ready to be sliced.
