- Yellow bell pepper 30g (approx. 1/4 pepper)
- Green bell pepper (or green chili pepper) 30g (approx. 1/3 pepper)
- Onion 80g (approx. 1/4 onion)
- Scallion 1 stalk (white part preferred)
- Minced parsley for garnish
Special Sauce
- Soy sauce 3 Tbsp
- Oyster sauce 1 Tbsp
- Corn syrup or rice syrup 3 Tbsp
- Chicken powder 1/2 Tbsp
- Black pepper 3 pinches
- Cooking wine (Mirin) 3 Tbsp
- Sesame seeds 1 Tbsp
- Sesame oil 1 Tbsp
- Soy sauce 3 Tbsp
- Oyster sauce 1 Tbsp
- Corn syrup or rice syrup 3 Tbsp
- Chicken powder 1/2 Tbsp
- Black pepper 3 pinches
- Cooking wine (Mirin) 3 Tbsp
- Sesame seeds 1 Tbsp
- Sesame oil 1 Tbsp
Cooking Instructions
Step 1
First, prepare the vegetables. Julienne the red and yellow bell peppers, 30g each, and the green bell pepper, 30g. Also, thinly slice the onion (80g) into thick strips. Cutting the vegetables into larger pieces like this will preserve their texture and make them more delicious when stir-fried.
Step 2
Finely chop 1 scallion. Stir-frying the scallion with chili oil later will add a fragrant aroma, so have it ready.
Step 3
Prepare about 150g of oyster mushrooms. If the mushrooms are large, tear them in half to make them easier to eat and to help them absorb the sauce better.
Step 4
Now, let’s make the special sauce, the key to delicious stir-fried udon! In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 3 Tbsp corn syrup or rice syrup, 1/2 Tbsp chicken powder, 1 Tbsp minced garlic (essential for stir-fries, though not listed in the original input, it’s a crucial addition), 3 pinches of black pepper, and 3 Tbsp cooking wine (Mirin). Mix well. This golden ratio sauce will be the flavor powerhouse!
Step 5
Prepare 1 serving of frozen udon noodles by placing them in boiling water. Once the noodles have loosened, immediately remove them and drain well. Be careful not to overcook them, as they can become mushy.
Step 6
Preheat a deep pan or wok. Add 2 Tbsp of chili oil. Add the chopped scallions and stir-fry for about 10 seconds to release their fragrance. Stir-frying quickly over high heat without burning the scallions is key.
Step 7
Once the scallion aroma is released, add the prepared oyster mushrooms. The mushrooms will quickly wilt in the hot pan. Stir-fry them just until they begin to soften. Avoid overcooking, as they can become tough.
Step 8
When the oyster mushrooms have slightly wilted, add all the julienned bell peppers, green bell pepper, and onion. Stir-fry until the vegetables are about halfway cooked. Keeping them slightly crisp adds a wonderful texture to the dish.
Step 9
When the vegetables are halfway cooked, pour all the prepared sauce into the pan. Stir-fry for about 10 seconds to coat everything with the sauce, then add the udon noodles. Continue to stir-fry, ensuring the noodles are well coated with the sauce.
Step 10
Once the noodles and vegetables are well mixed and the noodles have absorbed the sauce, turn off the heat. Finally, add 1 Tbsp sesame seeds and 1 Tbsp sesame oil, and mix everything together. Your delicious Oyster Mushroom Udon Stir-Fry is complete! Enjoy it hot.
