Sushi Ingredients

  • 1 Tbsp wasabi (freshly grated or tube)

Sushi Vinegar Dressing

  • 3 Tbsp rice vinegar
  • 1 Tbsp sugar
  • 1/4 tsp salt
  • 1 tsp lemon juice

Cooking Instructions

Step 1

The foundation of great sushi is the rice. Prepare 2 bowls of freshly cooked, warm rice. In a bowl, combine the rice with 3 Tbsp rice vinegar, 1 Tbsp sugar, 1/4 tsp salt, and 1 tsp lemon juice. Gently mix with a spatula, being careful not to mash the rice grains. This allows the vinegar mixture to evenly coat each grain, creating delicious sushi rice. Avoid overmixing, as it can make the rice mushy.

Take portions of the seasoned sushi rice and shape them into bite-sized pieces. After shaping, lightly spread a bit of wasabi onto each piece according to your preference. Be mindful of the amount, as too much can be overpowering.

For the octopus sushi, we’re using pre-cooked and sliced octopus. Simply arrange the octopus slices attractively on top of the shaped sushi rice. If preparing for children who might not enjoy wasabi, you can omit it for their portions. You can also lightly blanch the octopus slices for a softer texture.

Now, let’s prepare the shrimp. For clean shrimp, insert a skewer into the shrimp’s second segment from the head and gently pull to remove the digestive tract. This step helps to eliminate any ‘muddy’ taste and results in a cleaner flavor.

Bring a pot of water to a boil. Once boiling, add the prepared shrimp and cook briefly until they turn a vibrant pink color. Be careful not to overcook, as this can make the shrimp tough. Immediately remove the shrimp, rinse under cold water to stop the cooking, and then peel them.

Here’s a tip for beautifully shaped shrimp sushi: Make 2-3 shallow cuts along the underside (belly side) of the peeled shrimp. This helps the shrimp to naturally open up and lie flat when placed on the sushi rice, creating an appealing presentation. Gently adjust the opened shrimp to create a pleasant shape, and your shrimp sushi is complete!

If you find that the shrimp curl up significantly and are difficult to flatten, here’s an alternative method. First, cut off the shrimp’s head. Then, as described earlier, use a skewer to carefully remove the digestive tract.

Turn the shrimp over and insert a skewer along the length of the back. This will help to hold the shrimp straight as it cooks, preventing it from curling and making it easier to present nicely on the sushi.

Briefly blanch the prepared shrimp in boiling water until they just turn a bright pink. Remove immediately, rinse in cold water to cool, and then carefully peel off the shells.
