Ingredients (Serves 2)- 1 cup soaked rice (approx. 180g)
- 1 handful chives (approx. 30g)
- 1 boiled octopus leg (approx. 100g)
- 1 Tbsp cooking sake (15ml)
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp tsuyu sauce (15ml)
- 1 Tbsp sesame oil (15ml)
- 1/2 cup water (120ml)
Cooking Instructions
Step 1
First, rinse the rice thoroughly and soak it for at least 30 minutes. Drain the rice in a sieve to remove excess water. Soaking the rice makes it softer and more delicious.

In your pot, add 1 cup of the soaked rice. For the water, use slightly less than usual, about 1/2 cup (120ml). Adjust the water amount depending on the type of rice and how long it was soaked.

Now, let’s season the rice. Add 1 tablespoon of cooking sake, 1 tablespoon of soy sauce, and 1 tablespoon of tsuyu sauce for a deep, umami flavor characteristic of Japanese pot rice. Finally, add 1 tablespoon of sesame oil for a nutty aroma.

Thinly slice the boiled octopus leg into bite-sized pieces. Make sure the slices are not too thick, as this can affect the cooking time. Arrange the sliced octopus evenly over the rice.

It’s time to cook! Place the pot over high heat and bring the water to a rolling boil. Once boiling, immediately cover the pot with a lid, reduce the heat to low, and let it cook for 15 minutes.
