This LA Kalbi stew boasts a delightfully sweet and tangy broth that’s truly captivating. Thanks to being simmered low and slow for a long time, the beef short ribs become incredibly tender and melt-in-your-mouth soft. It’s packed with various vegetables, making each spoonful a delicious and wholesome treat! (Recipe inspired by Baek Jong-won’s method). The accompanying toasted bread is perfect for dipping into the rich stew.

Main Ingredients

  • LA Kalbi (marinated, with marinade) 320g
  • Cabbage 130g
  • Potatoes 2
  • Onion 1
  • Button Mushrooms 6
  • Cherry Tomatoes 6
  • Carrot 1/3
  • Water 700ml
  • Bread (optional, for serving)

Sauce Ingredients

  • Ketchup 4 Tbsp
  • Soy Sauce 1 Tbsp
  • Butter 25g
  • Whole Peppercorns, a pinch

Cooking Instructions

Step 1

Wash and prepare all your vegetables. Dice the onion, potatoes, carrot, and mushrooms into bite-sized pieces. Peel the potatoes and carrot before dicing. Cut the cabbage into similar-sized pieces. Remove the stems from the cherry tomatoes.

In a deep pot, combine the marinated LA Kalbi, all the prepared vegetables, and the sauce ingredients (except for the whole peppercorns). Pour in 700ml of water. Bring to a boil uncovered over medium-high heat for 10 minutes. Then, cover the pot, reduce the heat to low, and let it simmer gently for 45-50 minutes until the ribs and vegetables are tender and the flavors have melded beautifully.

As the stew simmers, you might notice tomato skins floating to the surface. It’s best to skim these off and discard them, as they can affect the texture and mouthfeel of the stew later on.

Once the stew has thickened slightly and all the ingredients are tender, turn off the heat. Sprinkle a pinch of whole peppercorns over the finished stew to enhance its aroma. Serve hot, perhaps with some toasted bread for dipping into the delicious broth!
