Tender LA Galbi (Korean Short Ribs)
Marinating LA Galbi: A Delicious Alternative to Weekend Dining Out
This recipe prepares LA Galbi (Korean-style short ribs) in a way that’s easy for everyone to eat, by removing the bones and cutting them like steaks. The leftover meat on the bones can be stored in the freezer for future use in dishes like fried rice or quesadillas. Here’s how to marinate your LA Galbi for tender, flavorful results.
Ingredients- 30 pieces LA Galbi (short ribs)
- 1 packet onion juice (approx. 100ml)
- 1 packet apple juice (approx. 100ml)
- 1 packet cabbage juice (approx. 100ml)
- 1 Tbsp ginseng enzyme
- 2 Tbsp cooking wine (mirin or soju)
- 7 Tbsp soy sauce
- 7 Tbsp store-bought galbi sauce
- 1 Tbsp minced garlic
- 3 Tbsp chopped green onion
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
Enjoy delicious LA Galbi at home this weekend instead of going out to eat! This recipe is for marinating 30 pieces of LA Galbi.
Step 2
To make it easier for everyone to eat, remove the bones from the LA Galbi and cut the meat into steak-like portions. Save the meat scraps attached to the bones; you can freeze them and use them later for fried rice or other dishes.
Step 3
After removing the bones, soak the LA Galbi in cold water for about an hour to remove excess blood. This helps reduce any gamey odor and results in a cleaner taste. After soaking, pat the ribs dry thoroughly with paper towels.
Step 4
Now, let’s make the delicious marinade! In a bowl, combine 1 packet of onion juice, 1 packet of apple juice, and 1 packet of cabbage juice. Add 1 Tbsp of ginseng enzyme and 2 Tbsp of cooking wine to help tenderize the meat and remove any unwanted flavors. Next, add 7 Tbsp of soy sauce and 7 Tbsp of store-bought galbi sauce for a rich umami flavor. Finish with 3 Tbsp of chopped green onion, 1 Tbsp of minced garlic, and 2 Tbsp of sesame oil for aroma and depth. Whisk everything together until well combined to create the marinade.
Step 5
Pour the prepared marinade over the LA Galbi and mix well to ensure each piece is evenly coated. Transfer the marinated ribs to an airtight container and refrigerate for at least one day, or preferably 24 hours. This resting period allows the flavors to penetrate the meat, making it incredibly tender and flavorful.
Step 6
Once marinated, place the LA Galbi in a pan along with all the marinade liquid. Cook over medium-low heat, covered, allowing it to braise. This cooking method results in a wonderfully moist and tender texture, different from grilling. Stir occasionally to prevent sticking and ensure even cooking.
Step 7
Serve the tender and flavorful LA Galbi. For an extra touch, garnish with pine nuts or chopped green onions according to your preference. Enjoy a delightful meal with your family!
