Main Ingredients- 400g Korean radish (mu), about 1/4 of a medium radish
- 150g beef (for soup, e.g., brisket or chuck)
- 1 handful frozen chopped scallions (green parts)
- 1.1L water
Cooking Instructions
Step 1
First, prepare the 400g of Korean radish. Peel it and slice it into pieces about 1cm thick, not too thin. Slicing them a bit generously helps maintain a pleasant texture after cooking.

Prepare 1 tablespoon of minced garlic.

Heat 2 tablespoons of cooking oil in a pot over medium heat. Add the minced garlic and sauté briefly until fragrant, being careful not to burn it. You’ll notice a lovely garlic aroma.

Once the garlic is lightly sautéed, add the 150g of beef and stir-fry until the pink color disappears. Then, add the sliced radish and continue to stir-fry together. Adding 0.5 tablespoon of coarse sea salt at this stage helps the radish release moisture, making it even more tender.

After stir-frying the radish and beef for a bit, add about 100ml of water to the pot along with the released juices from the radish. Cover with a lid and simmer over medium-low heat for about 5 minutes. This step helps the radish soften slightly and infuses flavor.

To ensure the radish becomes very tender, reduce the heat to low, cover the pot, and let it simmer gently for about 15-20 minutes. The key is to cook until the radish turns translucent and is fork-tender.

Once the radish is fully tender, pour in the remaining 1 liter (1000ml) of water and bring the soup back to a simmer over medium heat.

Let the soup simmer vigorously over medium heat until it comes to a rolling boil. Delicious broth will develop during this time.

When the soup starts boiling, remove the lid and skim off any foam or scum that rises to the surface. This step ensures a clear and clean-tasting broth.

With the radish cooked and the broth clear, it’s time to season. Add 3 tablespoons of fish sauce and taste. You can substitute with soy sauce if preferred. Adjust the amount of fish sauce or salt according to your personal preference.
