Must-Try Boiled Pork for Kimchi Seasoning Days Made with Yogurt!
Kimchi season is here, and what better time for delicious boiled pork (Suyuk)? My mother sends me kimchi via delivery, so on those days, I always make Bossam! This time, I tried making it with yogurt. The yogurt not only adds a subtle sweetness but also helps tenderize the meat, making it incredibly soft and eliminating any gamey odor. It’s perfect for enjoying with freshly made kimchi!
Ingredients- Pork shoulder or leg meat 800g
- Plain yogurt 10 bottles (approx. 650ml)
- Soy sauce 130ml (about 2 yogurt bottles)
- Water 400ml
Cooking Instructions
Step 1
First, place the 800g of pork shoulder/leg meat into a pot. Pour over 10 bottles (about 650ml) of plain yogurt. The yogurt adds a subtle sweetness and, importantly, acts as a tenderizer, making the meat incredibly soft and removing any unwanted odors.
Step 2
Next, add the liquid seasonings. Pour in 130ml of soy sauce (approximately the volume of 2 yogurt bottles) and 400ml of water. This combination will infuse the pork with a rich flavor as it cooks.
Step 3
Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer for about 40 minutes. This slow cooking process ensures the meat becomes tender and juicy all the way through. If the liquid reduces too much, you can add a little more water.
Step 4
Once the pork is cooked, let it cool slightly before slicing it into bite-sized pieces. Aim for slices about 0.5cm to 1cm thick for the best texture – not too thin, or they might fall apart.

Arrange the sliced pork neatly on a serving plate. Your delicious yogurt-boiled pork is ready! You’ll be amazed by the delightful contrast between the chewy fat and the tender meat. Serve with kimchi, dipping sauces, or salted shrimp for a truly satisfying meal!
