Ingredients- 20 pcs Bullet Squid
- Spicy-sweet dipping sauce (cho-gochujang), to taste
- 2 slices Lemon
- Coarse salt, for cleaning
Cooking Instructions
Step 1
These are bullet squid, which were immediately flash-frozen after being caught. They are also known as ‘arrow squid’. Freezing them right after catching is key to maintaining their freshness.
Step 2
Bullet squid are smaller than regular squid, measuring about 10cm. They are called ‘bullet squid’ because of their resemblance to a bullet. They are not only rich in flavor and nutrients but also enjoyable to eat with their innards.
Step 3
Due to their small size and tender texture, bullet squid are perfect for eating whole, including the innards. The preparation is simple! First, gently rub the white base of the tentacles with coarse salt to remove any debris. Then, rinse them thoroughly under running water several times. That’s all for the prep!
Step 4
Now, it’s time to score the body of the bullet squid. Hold your knife at an angle and make 2-3 diagonal scores on the body. This helps the flavors penetrate better and makes the squid look more appealing when cooked.
Step 5
Pour an appropriate amount of water into a steamer pot and bring it to a boil. Once the water is boiling vigorously, carefully place the prepared bullet squid one by one, laying them flat side by side in the pot. Make sure they don’t overlap so they cook evenly.
Step 6
Cover the pot with a lid and steam the bullet squid for exactly 5 minutes. After 5 minutes of steaming, turn off the heat and let them rest (steam) for another 5 minutes. This steaming process will make the squid even more moist and tender.
